If the 1 1-mpeint are Is carefully watched anil the time calculated, even a small roast proves satis factory. A filet of beef or the tenderloin is the tenderest cut fr a roast. It Is also the highest In price, hut there Is no waste of any sort in .bone, poor meat or fat. Next to the filet, the best cuts for roasting are t he porterhouse ,and "prime" rib cuts. .Many dis i criminating people prefer these ; roasts to the expensive filet, con tending that they are more flavor some nud juicy, "Knlleil .Itnast" Popular j When the hones are left in a rib j roast it Is called a "standing rib ; roast." No water should ever lie added during the cooking t.'ruo-' The meat .'.self furnishes plenty of moisture and water causes loss of flavor. Weight of Itcast Important It is Important that the weight of the roast Is known. Seasoning and time of roasting are reckoned according to weight. Allow 1 tea spoon salt and I -x teaspoon pep per for each pound of meat. Fif teen to 30 minutes are allowed to the pound Tor roasting. A rolled roast which Is niort compact than a cut containing hopes requires 20 minutes to the pound if the meat Is to be rare. A stand ing rib roast needs only 1 5 min utes to the imti ml to he roasted rare. Twenty-five or .Hi minutes to the pound produce well done roust:;. After the first 15 minutes' ' of roasting, reduce the heat of the oven. Preheat' oven to 500 de grees F, This Is hot enough for pastry. At the end of Hi minutes, the surface oG Uie roast is well sealed to prevent the escape of the flavor-some juices. ( Reduce- heat to 3 to 3 7.1 degrees R and roast for the required 'length of time. If a covi-red roaster is used, do not put on the cover until the heat Is reduced. , Uuli roast with suit and pepper mixed with a little flour when ready to put in the oven.
