20 minutes to the pound if
the meat Is to be rare. A stand
ing rib roast needs only 1 5 min

roasting, reduce the heat of the
oven. Preheat' oven to 500 de
grees F, This Is hot enough for
pastry. At the end of Hi minutes,

sealed to prevent the escape of the
flavor-some juices. ( Reduce- heat
to 3 to 3 7.1 degrees R and roast
for the required 'length of time.
If a covi-red roaster is used, do
not put on the cover until the
heat Is reduced. ,
