" - J ' More und more we find food bo lug sold by weight rather thun measuro und muny housekeepers are confused by the change. ' . ; The following table has been worked out for average servings for four persons: - Beets, diced and buttered to serve four, 1 bunch or 1H pounds. Cubbugo, raw, pound. Currots, creamed, h bunch, 114 pounds. Cauliflower, 3 to 214 pounds. Peas, buttered, 4 pounds un shelled. Spinuch, 1 14 to 3 pounds. String beuns, buttered, , 114 pounds. . ,( . . ' 'i'omntoes, sliced; 1 pound, v ' One heud of lettuco woiglilng 1 pound will servo four perbons. If cut In quarters. f One und one-hulf pounds of ui- ples should muke enough upple sauco for four people. This Is also enough for onu pic. Asparagus is usually sold by tho bunch und tho bunches usually weigh 1 pound, although in differ-. ent localities the custom varies. However, x pound of asparagus should serve four people if creamed on toast und three If buttered Much depends on the amount of tough end which Is wasted. With these quantities In mind tho needs for more or fewer 'per sons can easily be calculated. In dlvlduul appetites and likes must also bo considered and the part the vegetable Is to take in the meal. ; AsianiKUS With 1CK8 : Four hard-cooked eggs, 1 punidi apuiiugus, 3 ud)lcnodnsHAiriij- i tablespoon flour, 1 teaspoon suit, 1 14 cups uspurugus stuck, buttered bread crumbs.
