During the afternoon b. program f songs was given by several jnior girls of the church, assisted y Mbts Hulda Anderson. The Lev. William Crosby Ross, pastor f the church, spoke briefly. Swimming: Popular Sport at Present j Tho Cove swimming pool and, filler swimming places over the jiilley were visited by many peoplo iutt evening. One party of nineteen Iris from La Grande, left hero bout 6 o'clock, and drove to Cove, yhere they found so many people n swimming that they started uoklng for another suitable place. After visiting every swimming lace in the valley that they knew f they returned to the former loimtry club grounds, now tho Pine Cone," where they enjoyed , swim. LUNCHKON Jellied salmon, cu cumber sauce, whole wheat bread, rice souffle, milk, tea. DINNER Broiled mutton cut lets, creamed potatoes, kale In lem on butter, stuffed celery salad, snow pudding, oatmeal bread, milk, coffee. A vegetable soup should bo pro vided for children under six yours of ago to take the place of the flah In the luncheon menu. Tho Jellied salmon Is well worth keep ing in mind as It makes a good picnic or "company" dish during the hot months. It looks expensive but does not make too big a hole In one's pocketbook.- Jellicd Salmon. One and one-half cups flaked salmon, 1 tablespoon granulated gelatine, 2 tablespoons cold water, 1 egg, 1 4fr tablespoons flour, 1 ta blespoon; sugar, 1 teaspoon salt, teaspoon mustard, H teaspoon pap. rlka, 2 tablespoons melted butter, 4 tablespoons lemon Juice, cup mi lie If canned salmon Is used remove fish from can and pour boiling wa ter through fish., Remove any skin and bones and scparato into flakes.. - Mix. and sift flour, mus tard, sugar,, salt and paprika and add to melted butter. Add egg slightly beaten with milk. Cook over hot water, stirring constant ly until mixture is perfectly smooth and thickened. In the moan Unto soften gelatine in cold water for, five minutes. Remove sauce from heat and stir In gelatine. Stir un til gelatine Is dissolved and fold in fish flukes. Pour into individual molds and let stand several hours to chill and becomtt firm. Serve on lettuce. To make the cucumber . sauce pare and mince 1 cucumber. l)raln through cheesecloth. Beat cup sour cream until stlfr with teaspoon salt and a few grains of pepper.
