I beg the use of n little space In your valued publication. To begin with, this ruling wus not made In the Interest of any dealer or person, but for tho pro- lection of the consumer and for the protection und In the Interest of the honest producer, be he farmer, small poultryman or operator of a commercial hennery, ns well as the grocer and other dealer who wants to receive and give a square deal. The ruling was made consulting a number of producers as well us dealers and with the advice of the office of tho district attorney of Multnomah county, und of tho state market master und we believe it is In the interest of the poultry industry and of all honest persons connected therewith. Regard less of whatever may have been said to the contrary this ruling was not intended to. neither does It exclude any good market able egg no mutter where nor by whom produced. The ruling reads us follows: 1. A fresh egg Is un egg of re cent production, clean, full with "fixed air price" of not more than three-sixteenths of an inch In depth, sweet, strong of body and unimpaired In quality. The albu men must not appear watery. A larger air space with a movable lower line Indicates a stale egg, or one that is becoming weak or wat ery. 2. A fresh standard egg ia a fresh egg, as defined In paragraph 1, weighing not less than ono and live-sixth ounces. 3. A fresh pullel egg is R fresh egg weighing not less than one and seven -twelfths ounces. 3. A fresh "poowee" egg is any tre.sn egg weighing less than one. and sveii-lwelfths ounces. 5. All standard eggs, pullet eggs iind "peewee" eggs shall be packed separately and the grade plainly marked on the end of thu cuse. showing the particular grade of the 'ggs in the case. tl. Second-grade eggs are good, edible eggs, but with an air space more than three-sixteenths of an inch in depth und not good enough to grade as siandard In the differ ent classifications herewith defined. Kggs known as large hatch spots heavily shrunken eggs, settled yolks and leaking 'ggs. and eggs wit h loose air space are fit for consumption but will not stand transportation. 7. Tho definitions and standards used are practically In line with the rules and regulations of many olh-i er states, also the requirements or the United Stales Department of Agriculture and 1 challenge any onu to find anything In them that will exclude marketable eggs from any market In Oregon. You will note that this ruling does not compel the farmer to gri'.dc his eggs If he finds it Is im possible for him to do so unless he is selling direct to the consumer. In that cuse he must candle and grade his eggs. Neither does it compel the country storekeeper to candle and grude eggs received from th( farmer only in such case us he la distributing to the con sumer. However If they will not do so wo uru not in position to compel them to. hut we will absolutely require that some where between tho man who pro duces said eggs und the man who sells them to the final distributor, they shull be candled and graded.
