Many of the substituted recommended bv Mr. Hoover are new to Lu Grande housewives. We take pleasure In recommending this recipe for tomorrow. WHEAT-RYE BREAD Half Wheat Flour and Half Hye Flour Yeast .. 1 cake Magic yeast, 2 cups lukewarm wa cr, 2 tablespoons sugar, 2 tablespoons wheat flour, Yt teaspoon salt, '.-i cup boiled mashed potatoes. Soak yeant 20 minutes in 1 cup of water. Mix remaining ingredients in the other cup of water. Add soaked yeast and mix thor-' oughly. Let rise over night. Yeast will bo' ready in the morning. , , Sponge , 2 cups slightly warmed rye flour, .1.. tot!, spoon salt, 1 tablespoon sugur, yeast, pre pared as above. Stir flour, suit and sugar into above yeast, and beat with a spoon until the batter is so smooth that it will fall In ribbons like the batter for a fine cuke. Set the sponge in u warm placo to rise. It will double in less than three hours. . - . Bread Above sponge, 2 teaspoons salt, 1 cup rye flour, about 3 cups wheat flour. When sponge nas doubled, stir in tho salt, ryo flour and sufficient wheat flour to make it stiff enough to knead. Try to handle as soon ns yon can after i cups of flour are added. Brush the freshly scalded and dried bread Loard with warmed flour. Add, grad ually, remaining flour. Completely knead to sticking point after each small addition of , flour, .,.(c(,xba sevo.tuJ4jmo, JT.iijally.jnakS into two loaves the shape of rye bread and linkn on an iron sheet or on the bottom of an inverted dripping pan. h a sweet flavor is desired, add tablespoon of molasses when making the bread. - K'll' This space will be used daily for new recipes for Wheat Substitutes.
