McAllisUr has given to the dairy which has made La Grande famous throughout the world of Jersies. The name was given because of the presence of scores of bubbling springs which break through the ground on the property sur rounding the farm, and furnish clear and cool water in sufficient quantities for all purposes. In fact these 'springs furnish water sufficient to form a small lake The McAllister Residence , which Mr. McAllister has stocked with fish and now finds pleasure and profit from its-waters. Mr. McAllister has made the dairy business a profound study for a number of years and his well planned stables, highly bred herd, and modern equipment throughout but bears evidence to the fact that Spring Brook Dairy is not the result of haphazard methods. Yesterday an Observer report er visited the dairy and was permitted to wander over the premises at will to dis cover for himself exactly how the bosi nese of milk making was conducted. He found that the herd consisted of thirty Jersey cows, all comfortably housed in substantial stable which covers a .ground space of 2400 square feet Each cow is provided witfc a separate stall in which she is fastened. Though confined to her own stall she is not tied and has complete freedom of movement, in this stall she is retained nly a part of the day, : the greater portien of tbe day when the weather will permit the cows are a' lowed to range over the alfalfa pastures through whisn numerous little brooklets find their way from the springs to the lake. Each cow is as carefully groomed as a driving horse and just prior to milking time their flanks and udders are spunged off with damp cloths. By this means all possibility of dust or dirt falling into the milk is prevented.. As soon as the bucket is filed the milk is taken to the separator room where it is first passed through a strainer and then through the seprator. The separator has the double effect of removing all foreign matter from the milk and also drives out the animal heat. .The spouts of the separator are set to completely mix ine mn - ana ciaim the process of separating is 'tarried on. From the seperator the milk is placed ' In the bottle, which as soon as full are hermetically sealed. The milk it then ready for delivery to the customer. In order to supply the trade with individual bottles over five hundred bottles are re quired. These bottles are washed and scalded each day. E Reynolds, the president of the association, and they were all unanimous and enthus iastic over the suggestion of having another reunion. Committees were ap pointed to secure a place of meeting and to select a suitable date to'be some time in the fore part of February.
