Half a Douud of grated bread crmubs, quarter pound of chopped auet, half a Dound of moist sugar, two eggs, one large lemon, pinch of aalt Mine the lemon peel very finely, mi an m drv int-redtenta in a basin, and mix well. Moisten with the eggs and the atrained juice of the lemon. Stir well and put the mixture into small but tered cups or mould. Cover with but tered paper. Set them in a kettle of boiling water, and let them ateam for two and a half hours. Turn them out in a dish, and Btrcw sifted sugar over them. Baited Almond. Blanch the almonds In boiling hot water. Melt a tablespoonful of butter, and let the almonds stand In It an hour. Put a tablespoonful of aalt luto a dish, stir In the nuts until all are lightly covered with salt, spread on a shallow tin and set !n a warm oven to brown delicately. More or less salt may be used, according to taste. Tea nuts are salted In the same way, ex cept that they do not need blanching, as tba brown bull comes off easily. Chocolate Coetards. To two cups of milk add two well beaten eggs, two slightly rounding tea- spoonfuls of cocoa, three level table-' spoonfuls of sugar, and one-half tea spoonful of vanilla flavoring. The co coa ahould be mixed with the sugar and dissolved In half of the milk heated, and when this has cooled a little add the other Ingredient and pour Into cups. Set the cupa In a pan of boiling water and bake In a moder ate oven. Pepper Sandwiches. Remove all the seeds from a green pepper, chop One and simmer ten min utes In a tablespoonful of butter. Do not allow it to brown. Add a dash of salt, and when cold spread between thin slices of bread minus the crust Grated American cream cheese may be placed on the top of the pepper layer with happy results. These piquant lit tle sandwiches are said to be especial ly nice with cold meat Cranbarrjr Fritter, Beat one egg thoroughly and stir ltt Into one and a half cups of milk, add one tablespoonful of sugar and one cup ' of flour In which has been sifted oue teaspoonful of baking powder. When well mixed stir In one cup of thick, rich cranberry sauce, and drop In spoonfuls on a hot buttered gridiron. Brown very lightly and serve with but ter and powdered sugar. Good House keeping. Creamed Ojetere. Put one quart of oysters, with the broth, Into a stewpan, and let the oy sters heat through. When the edges of the oysters curl, take them out and add two cups of milk and two table spoonfuls of butter to the broth. When boiling, add two tablespoonfuls of flour which has been stirred smooth In a little cold milk, with salt and pepper. When thickened, add the oysters, and serve at once on slices of toast I Apple with Craam. Peel, core and quarter six large tart apples; boll in a rich sugar syrup till tender, but not broken. Place In a glass dish, boil tbe syrup a little long er, and tben pour over the apples. When cold cover with a thin layer of red currant Jelly, and over all pour a thick layer of whipped cream sweet ened with sugar. Ham Toaat. Mix some pounded cold bam with a beaten egg, season with pepper and lay on buttered toast; put in the oven until It gets thoroughly heated. A nice way of using up small pieces of bam. To Maka Dried Beef. The Dahlia. Make a plain brine of four gallons The dahlia was introduced into F,u water, six pounds salt, one ounce salt- rope for the value of its bulb as a siib peter. Cover the meat with this, and stitute for the Irish potatoc, which it leave it in three weeks, then bang up resembles when baked. to dry. Bales at Fa ire. Sales at fairs have long been a fea ture of the English cattle shows. In fact, they have become so general that many of tbe English shows are really market days and are held at frequent Intervals. Eales have played a more or less Important part with American exhibitors, but have always been made privately, and fair officials bave taken little or no Interest in encouraging them. There would seem to be an op portunity in this country for advance ment In this direction. If sale classes are arranged for and a certain part of the day st aside for auction sales of cattle or other produce both tbe fair management, exhibitors and general public might be benefited thereby. It would belp the farmer out at tbe spot where he is weakest that is, in mar keting what be grows. American Agriculturist. Cleana Out Vermin. A writer In the Scientific American says he has cleared his premises of vermin by making whitewash yellow with copperas and covering the stones and rafters In tbe cellar with it. In every crevice In which a rat might go he put tbe copperas and scattered It In the corners of the floor. Tbe result was a complete disappearance of rata and mice. Since that time not a rat or mouse has been seen near the bouse. Every spring the cellar Is coated with the yellow whitewash as a purifier and a rat exterminator, and no typhoid, dysentery or fever attacks the family. Cement Floora tor Hnrne. From a sanitary point of view there Is no doubt that cement floors are the best for barns and stables. However, when putting on the finishing layer, It should be rather deeply striated, which prevents it from becoming slippery. The striae should follow a system fa vorable to drainage that Is, the suiuli furrows should lend to larger ones and these to the drain In tbe rear of all stalls. This Is very easily done. V;1 . ,'v. Catholic Stand ard and Times. Bay of Apia Fish. In the bay of Apia, in Samoa, a sur veying party has discovered 453 dis tinct specimens of fish. RHEUMATISM AN INDESCRIBABLE TORTURE Because Rheumatism sometimes comes on suddenly it doesn't prove that it is a chance disease or one due to accidental causes. It takes time for it to develop, and is at work in the system lony before any symptoms are felt. The blood is tha first point of attack, and the poisonous acids that cause the aches and pains are the a distrib uted through the circulation to different parts of the system, and settle in joints, muscles and nerves; and when the system is in this condition it needs only some exciting cause like exposure to night air, damp, chilly weather, or the cold, bleak winds of winter, to arouse the slumbering poisons and bring on Rheumatism. The severity of the attack depends upon the amount of acid in the blood and the quantity or acriu matter in too joints and muscles. Some peo ple are almost helpless from the first, while others have occa sional spells or are uncomforta ble, restless, nervous and half sick all the time from the nagging aches and pains. Rheu matism is a disagreeable com panion even in its mildest form, it grows worse as we grow older, and frequently stiffens the joints, draws the muscles out of shape and breaks down the nervous system.
