The Buffulo (New York) Times Is curious to know where those people who profess Ignorance concerning Vice Presidential Candidate Sherman have been hiding themselves all these years. The Times saya: "Ills mine is carved deep in the history of the nation. Ho is the 'My Dear Sherman' addressed In a letter on the Bubject of Ilarrimnn campaign contributions written by President Roosevelt; the very mini who ap proached the great railroad magnate but heard abuse of the president from him liiBtead of getting a check worth photogrnpbing; who reported the matter to the president und re ceived from that olllcial the same day the famous 'undesirable citizen' letter which brought from a pigeon hole the equally famouB 'practical man' letter from the president to Mr. Harrlinun; altogether one of the most notable Incidents In political history. It Is true that his record of uboiit 18 years in congress is not marked by any advocate or support of legislation In the Interests of the musses, but he has usually been in attendance at tho sessions of the house and bus always drawn his sal ary and mileage regularly. It Is plain that the delegates who wanted to know who Sherman was were poor trash, for all the rich men of the run iihllcan narlv know lilm well. In the capacity of olllcial fat fryer he Hilled upon them all and severally, or words to that effect, In llilltl. and with his story or financial necessities of his party touched them deeply; excepting, of course, Mr. Ilaniinan. who made the fuss thai made the president angry and Mr. Sherman ruinous." NOAH & STAPLETON, Jckon St., Near McCUUen Hotel Roscburg Will Be Reduced In Price In Order to Show American Public the Value of Portions Now Considered Worthless. Chuck Steak After Careful Cookin; Good Eating, Says Expert. Every peraon in the country Is lu te rested la the price of aieut and will therefore uIko be IntcrcKted in a move ment which the western packer are preparing to undertake to teuch the American put He thut other portions of a beef are as nutritious and. when properly cooked, as pa In table as the costlier cuts. The ultimate cud will be the lowering of prices on all prudes of meuts. especially lu those cuts which are now lu chief demand. In short, the western packers are preparing a campaign to teach the pub lic to buy and eat the whole "critter" and not a few choice cuts alone, from the Bale of which the retailers my they must obtain the cost of the entire car cass because of their Inability to sell the cheap cuts. This campaign Is to ie carried ou through the retail deal ers of the country, who will be coached on the subject so thoroughly that they will be competent to teach their customers. The packers say one of the chief rea sons why beef Is uot cheaper In Amer ica Is that the people demand the best cuts and Unvee much of the so called nferior grades on the hands of the packers that they are forced to keep the price of the best cuts up to counter act the waste, but If the sales of the cheaper grades were Increased the cost of all would decrease materially. One of the packers' arguments will lie taken from the year book of tbe United States department of agricul ture, written by George K. Holmes, chief of the bureau of statistics. Mr. Holmes points out the mistake made by people of limited means In selecting the most expensive cuts when many of the unsought portions nre eiua!Iy or even more nutritious. One of Mr. Holmes' comments Is as follows: "Although epicureans admit and chemists demonstrate that the ueck piece Is toothsome and nutritious. It bears the lowest price. In fact. It would hardly te considered respectable to ask the butcher for a piece of the ueck. Perhaps a low order of proflclen- I cy In the housewife's cooking in tne past wave to the neck piece Its low place. The story might have tieen dif ferent had the cook known how to utilize the meat lu the making of at tractive and delicious dishes. The point of the argument Is that rheap cuts of good carcass are as g-iod as expen sive pieces when Judiciously selected and prop.-rly cooked." American butchers complali' that the average housewife has Utile knowledge of the art of cooking. She does not know how to make a tasty dish of the cheap grades of meat. She therefore buys the ticst steaks, slaps them In the frying pan mid places them on the ta ole when she thinks they am properly cooked. On the other side of the Atlan tic the cuts sre placed on a more equal footing, the demand for the different cuts being more general. On this side the laborer's wife Is more likely to or der chops or steaks than to ask for brisket or ueck. and In consequeuce It pays the big packers to send barrets and barruJs of brisket and the cheaper cuts to Lnglatid, while lu mutiy cases the Ante) U an butchers would prefer purchasing more of the portions from which they take the so railed "choice" cuts to stocking up with the entire car cans. While the tenderloin ts the tendered! and Is couNUU-red the most delicate cut. It Is not so Juicy or so well flavor ed as other portions less tender, and It Is uot nearly so nutritious as purts which retjuhe more cooking. And both teuderlolu and sirloin i-ontnlu less nutritive value than Is found In the cheaiHT meats. Another government expert snys that u clinch uteak after careful cooking coinp- s favorably with a round or sirloin liom the same carcass. You often hear such questions ask ed as why did they build the oc so near the shore, but the question that Is bothering tfce puoll: now is how did Burr's Music House sell a eat load of Hush & Lane pianos lu Ave weeks? The following will exulain: When a customer sees one of these artistic cases with selected veneos and seven coats of varnish tney Im mediately become Interested ana when they are shown the interior, which has nickel plated tuning pins and that the trimmings on the action as well as the hinges and pedals are of brass, which prevents that long troublesome feature of rusting. which Is very essential in this eli-, mate, then the acoustic rim (or Bound holder) which encircles the back of the sounding board and gives .he piano a rich sustaining tone wit It the power of a parlor grand. I'l ad dition to the above, the Hush ft Lane piano has an Iror frame which cov ers the entire height and breadth o the niano. welching 250 poinls, or double the weight and Btivns-h of the frame of a medium grade pfano. The Iron frame l.i a very important feature of ulano construction, rc r when a piano Is 'n tune It Is es'lmat- ed that there Is a strain of .3 tons on the frame and ti least resiance of the frame. would throw a piano out of tune. The foregoing features, to- nether with their special action, which has a continuous metal flange nr hlnue and the crown or arched sounding board, also the rock maple built up pin block and bridges, ana a few other features gives the Hush & Lane pianos eveiy late Improve ment known to piano construction. And when you consider that our prices are from $60 to J150 below tnat of city price, do you woniio; '.hat we have soid a car load in live weeks? And If you are at all inter ested in music and have failed to in spect our first car it will be a delight to inspect our second car, which will arrive about Sept. 9. BURR'S MUSIC HOUSE.
