are now lu chief demand.
In short, the western packers are
preparing a campaign to teach the pub
lic to buy and eat the whole "critter"
and not a few choice cuts alone, from
the Bale of which the retailers my they
must obtain the cost of the entire car
cass because of their Inability to sell
the cheap cuts. This campaign Is to
ie carried ou through the retail deal
ers of the country, who will be coached
on the subject so thoroughly that they
will be competent to teach their customers.
The packers say one of the chief rea
sons why beef Is uot cheaper In Amer
ica Is that the people demand the best
cuts and Unvee much of the so called
nferior grades on the hands of the
packers that they are forced to keep
the price of the best cuts up to counter
act the waste, but If the sales of the
cheaper grades were Increased the cost
of all would decrease materially.
One of the packers' arguments will
lie taken from the year book of tbe
United States department of agricul
ture, written by George K. Holmes,
chief of the bureau of statistics. Mr.
Holmes points out the mistake made
by people of limited means In selecting
the most expensive cuts when many of
the unsought portions nre eiua!Iy or
even more nutritious. One of Mr.
Holmes' comments Is as follows:
"Although epicureans admit and
chemists demonstrate that the ueck
piece Is toothsome and nutritious. It
bears the lowest price. In fact. It
would hardly te considered respectable
to ask the butcher for a piece of the
ueck. Perhaps a low order of proflclen- I
cy In the housewife's cooking in tne
past wave to the neck piece Its low
place. The story might have tieen dif
ferent had the cook known how to
utilize the meat lu the making of at
tractive and delicious dishes. The point
of the argument Is that rheap cuts of
good carcass are as g-iod as expen
sive pieces when Judiciously selected
and prop.-rly cooked."
American butchers complali' that the
average housewife has Utile knowledge
of the art of cooking. She does not
know how to make a tasty dish of the
cheap grades of meat. She therefore
buys the ticst steaks, slaps them In the
frying pan mid places them on the ta
ole when she thinks they am properly
cooked. On the other side of the Atlan
tic the cuts sre placed on a more equal
footing, the demand for the different
cuts being more general. On this side
the laborer's wife Is more likely to or
der chops or steaks than to ask for
brisket or ueck. and In consequeuce It
pays the big packers to send barrets
and barruJs of brisket and the cheaper
cuts to Lnglatid, while lu mutiy cases
the Ante) U an butchers would prefer
purchasing more of the portions from
which they take the so railed "choice"
cuts to stocking up with the entire car
cans.
While the tenderloin ts the tendered!

cut. It Is not so Juicy or so well flavor
ed as other portions less tender, and It
Is uot nearly so nutritious as purts
which retjuhe more cooking. And
