Pearson, assist ant chief of the dairy division of the department or agriculture, wore there. There was a royal good tlmo and a great deal of swapping of practical knowledge How many dairymen test their cows? How many know, when they sell an animal, the exact value or what they aro parting with? A friend or mine said tho other day: '1 sold ono or my cows and a short tlmo afterward the purchaser in formed me that sho was making eleven pounds of butter a week besides furnishing what cream tho family used at tho table. Orders are sent to tho store with the cans ror anything In tho merchandise lino, and the next day the goods aro deliv ered at storo priced. Mall Is also thus delivered, and tho system forms a great convenience to a largo settle ment. In addition to tho largo amount or milk thus secured, Mr. Reed milks (by proxy, or course) 200 cows on his own ranch. He operates largo silos to reed his stock, and Is u staunch supporter or this kind 'A feed He also buys considerable but tcr lu tho granular form, which is put through tho creamery process. Tno product or this factory Is sold at SuuFran Cisco, whence It Is shipped by wattor, und brings from 17 to .10 cents per pound. Considerable of this creamery butter wasicanned last year, tor tho Alaska, Hawaiian and Mulnla trado. Senator Reed does not want a boun ty on butter. His business dues not depend upon legislation for existence, aud Is not a tax to tho people, but a constant sourco of revenuo to scores of famllses. FLAVOR IN nUTTKlt. Id Is a prctt generally accepted fact that flavor In butter Is duo to bacteria, aud It would bo better for the butter maker If tho ract wns more generally accepted as truth. Thero are, of course, exceptions to this rule, as, for example, garttc In tho spring. Unfortunately that Is" not. duo to any sort of bacteria, but to tho garlic ltscir and only itself. Wo say unfor tunately because any ilavor that Is produced by bacteria mav be con trolled by tho butter maker, and un desirable Mayors may bo eradicated while desirable flavors may bo culti vated. To tho dairyman of forty years ngo this would seem liko nonsense, but It is as of Just ns much senso as that clovor hay will produoa milk. Every one knows that ir the churn Is not washed after churning time, but left to stand with specks or buttor adher ing to the sides until next churning time, and thon the cream poured into tho churn without, washing, that the butter will be off flavored. And why this takes placo Is explalnol by bac teria. If thoro were no bacteria wo might never wash our churn and no had rosults follow. But any bit or organic matter lofb to Itself under favorablo conditions soon dovelopcsn brood or bacteria that feed on tho matter ltielf, and this Is what hap pons when any utensil Is not washed clean and ns a result these bacteria get Into tho butter, and away goes tlie desirable flavor to nniko room for tho undeslrcablo, pretty much ns grass will get out of the way to make room for a crop of weeds If the soil Is not right. Now theroaro two points to bo kept in mind regarding bacteria In but ter; tho llrst of which is that most bactorla will succumb to a tempor aturo of two hundred and twolvo degrees, nnd tho second Is that If tho undeslrcablo bacteria aro alljjgotton out of tho way that tho deslrablo kind will como of their own accord when the cream Is left to rlpon. Try and kill tho undesirable kind by scalding with boiling water every utensil that Is used in oithor tho dairy or milking, and then tho dc slreablo kind will como oUholrown accord.
