Many letters have reached me with in a week asking for information as how to preserve the many prunes and plums which were cracked or burst open by the late rains and, of course, cannot be evaporated. Heretofore no attention has been paid to conserve fruits, which as a general rule, are the finest being the ripest but no doubt the probable demand for fruits for Alaska occcasloned those ri quests. Prunes which were burst by rain, and all prunes too small for drying as well as apples, pears, cherries and ap ricots not saleable In their fresh state should be conserved. The fruits, af ter bolng washed, are placed in a copper-lined kettle and boiled soft (pears and apples being first quartered, skins left on), then passed through a slve, which leaves the pits and seeds, cores and skins of whatever kind of fruit Is being prepared. The jam thus pro duced is again put into the kettle and boiled down, sugar being then added to all-tart fruits. Great care must then be taken to prevent scorching by constant stirring, with a wooden spoon or paddle, using the confectioners mode of stlrrins in the shape of a figure "8." When of the proper (con sistency, which is ascertained by placing a spoonful an a plate, and If no juices sop irate It Is all right. It Is then poured on wire trays, on which waxed papers hac been spiead to hold tho jam, and put Into the evaporator and dried under a low heat. If for family use, the jam Is placed on soup pl.Ues and dried In tho oen. turning over occasionally, also under moderate heat. When nearly finished and dry enough so they can be handled, these cakes are taken out and placed on clean boards and exposed to the air, which will make tliem firm and hard. They aie LIi.m cut into strips to suit and pi ked IiboXiiS, lined with waxed papor, and between layers, either for market or home consump tion. These eakeb w 111 keep for many years without deteriorating, and are particularly valuable for military posts, ship and steamer use, camping parties, farmer, mining camps and in climates where ordinary jams or jellies will not keep, and are especi ally appreciated In years when fruits are s-urce and high. To prepare them for table use, take the desired quan tity of tlio cake, add sufficient, hot water ana allow it to dissolve for one hour, then put on the stove and let it come to a boil; add spices if desired, to suit the taste, and you have a de licious refreshing dessert.
