They have completed their fifth of eight sessions. The eleven girls have met regularly on Thursday evenings for discussion, films and demonstrations on basic nursing care. Mrs. Goff said that it has been the practice in many places to hire a nurses aide “off the street’’ and put her to work. Malheur Memorial Hospital feels that the health care consumer deserves skilled care, and has initiated these classes to better equip these young ladies toassist the R.N.’s and L.P.N.’s at the hospital. Sunday my neighbor and I had dinner together, and among other foods, she brought the most delightful dessert - SPICY OATMEAL CAKE l l/4 cups boiling water l cup rolled oats l l/2 cups brown sugar, firm ly packed T/2 cup butter or margarine 1 tsp. vanilla 2 egg's l 1/2 cups sifted, all-purpose flour 1 tsp soda 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp. salt Pour boiling water over oats and set aside. Cream butter and “igar. Add vanilla and eggs and b-*at well. Add oats mixture. Sift together remain ing ingredients and stir until well blended. Pour batter in to greased 9x13x2 inch pan. Bake in a 350 degree oven for 25 to 30 minutes. Frost with Lazv Daisy Icing. LAZY DAISY FROSTING 1/4 cup butter or margerine 1/4 cup milk 1/2 cup brown sugar, firmly packed 1 cup cocoanut 1/2 cup chopped walnuts Heat butter and milk until butter melts. Stir in brown sugar, cocoanut and walnuts. Spread evenly over hot, baked cake in pan. Place low under broiler until slightly brown and bubbly. I’ve just finished making a tasty dessert without exerting much energy or using much time. I’m having a group of ladies in this afternoon and wanted toserve somethingeasy. When you’re in a hurry things always go wrong. This was no exception. I got the rubber spatula caught in the beater of my electric mixer and splat tered whipped topping all over the kitchen wall! The dessert turned out great, tho. LEMON INSTANT DESSERT 1 pkg. LemonChiffon Pie Filling 1 pkg. whipped topping mix (z tups) 20 vanilla cookies (crushed) Make the Lemon Chiffon Pie Filling according to the directions on the package. Also the whipped topping mix. Com bine pie filling and topping mix and fold together. Pour over 1/2 the vanilla cookie crumbs into a 6”xl0” casserole. Cover with remaining crumbs. Serves 6.
