The correspondece course is offered New Course Available ¿For Seafood Preparation A new correspondence course for the homemaker who wants to serve seafoods is being of fered to area residents. The free series of lessons will be offered as a correspondence course through the Malheur County extenstion office. Es pecially suited to the needs of women who are “home-bound” because of small children or other responsibilities that make it difficult to attend meetings, the course consists of three lessons. Each has an assign ment to be completed at home and mailed back to the County Home Economics Extension ¿gent. “Many homemakers enjoy seafoods themselves and want to serve them to their families, but often they’re not acquainted with the many easy, interesting methods of preparing ocean dishes,” explained Helen Con ner, home economics agent. “The new course is intended to help homemakers be as fa miliar with seafood buying and preparation as they are with other forms of animal protein,” said Mrs. Conner. The new course, entitled “You — the informed seafood buyer,” was prepared by Mrs. Velma Seat, extension food marketing specialist at Oregon State University. Sections of the course are devoted to buying fish and shell fish, judging quality and cost, and preserving seafoods.
