Victory Food Hints By Leona Andenon Idaho Powrr Company Home Service Advisor CANNED VEGETALES CAN RE INTERESTING Are you the opener, dumper, server type of cook whose family grows tired of vegetables (home- canned or rationed* before the winter is half over? If you aren’t I'll wager you know plenty who are. String beans and tomatoes can be just as interesting the latter l>art of the season as they are when fresh, if you vary seasonings and ingredients. String beans for in stance can be served five or sis different ways with a little extra work. 1. Add a pinch of thyme, salt, pepper and butter to the beans after you have poured off all but 1-3 of the liquid (save liquid for gravies, etc.) It gives them a new and interesting flavor. 3. Brown a little onion in but ter or bacon drippings Add beans and cook them in 1-3 of their own liquid. 3 Serve them in white sauce— —make the sauce first, using part of the liquid from the can. with milk—or use all milk if you have it. Just before you serve them, add a dash of paprika. 4. Add cheese to white sauce: grate It fine and add to the beans just as you remove them from the range. One-fourth teaspoon of dry mustard may be added to bring out the cheese flavor. 5. Scallop them with bread rubes—prepare the cheese white sauce as above, add the beans, put them in a casserole, top with bread rubes and cook them In a 390 de gree oven for 30 minutes. Lastly. but most important, never taste home-canned food before it is rooked. They should always be cooked at boiling tem perature at least 10 minutes before being used in any way.
