CLEAN Urges Public Cure
"An ice-cream w r a p p e r
weighs 3 / 1 6 of an ounce How
come it's too heavy to carry to a
litte r basket
That question posed by the
above illustration is one that is
being asked by C LEA N and
Beautiful. Inc in its campaign to
help n d the state of litter.
CLEAN is the public service
litte r prevention agency spon
sored by business, industry and
labor in Washington and Oregon
" I f each person visiting a
beach or a park w ould carry his
few ounces of litte r to the nearest
litte r receptacle, the landscape
w ould rem ain uncluttered for all
to enjoy
John Christianson,
vice president of C L E A N de
clared
Calling attention to the many
summer outdoor events drawing
large crowds. Christianson said.
“ L itte r is always a greater prob-
lem where people gather for a
short period of tim e Last year,
for instance, it took two men one
full week to clear nearly 38 tons
of litte r from the scene of one
hy droplane race, and it took 16
men two full days to remove
nearly 15 tons
at
another
course.”
FRO ZEN
I t ’s tim e to get readv for the
canning season, reminds Judith
Forest extension food and n utri
tion specialist at Oregon State
University. I f you plan to can
vegetables, you will need a pres
sure canner
I f you don't have one. you m ay
be able to borrow or rent one. or
buy one w u . or perhaps second
hand
Each year the canner needs to
be checked over thoroughly If it
has a dial pressure gauge, have
it checked for accuracy Ask the
dealer or your county extension
home economist where to have it
checked
An accurate gauge is essential
to the safety of home canned
foods If the gauge is off five
pounds or more, you d better get
a new one I f the gauge is not
more than four pounds off. you
can correct it as explained in the
bulletin, "Hom e
Canning of
Fruits and Vegetables,” a v a il
able free from your county ex
tension office
If the canner has a weight
gauge, it must be thoroughly
cleaned Clean the openings of
the safety valve and the pelcock
which closes it by drawing a
string or narrow strip of cloth
through them
Wash the canner kettle Wipe
the cover clean with a damp
cloth Take the gasket out,
it and turn it over before putting
it back
The boiling water bath me
thods is used for canning fruits
and tomatoes and for processing
pickles The w ater bath canner
or other container used must be
deep enough to allow two to four
inches of w ater above the jars.
Good canning jars are also
necessary . M rs Forest empha
sizes You may get some se
condhand. but they must be
checked carefully for nicks on
the rim s Nicked jars that do not
seal perfectly could allow foods
to spoil The same problem
might occur with jars in which
food comes from the grocery.
These are not designed for home
canning and may not seal pro
perly

in daily ”
