I A frequent cause of white specks in ■butter is the cream diyiug on top so ■kit.it it does not all chutu out. I Another cause of white specks is too ■much milk being skimmed in with the Irream. This milk settles to tho bottom, land if it is kept too long itud gets too pour forms a hard curd, which is broken lup in churning and produces the specks, riliese being heavier than the butter can lie wished out if the butter is washed in the flue granular form. I The prevention lies in avoiding the Icouditicns that I have mentioned as |c lusing while specks. This troublo is I more often encountered in gathered [cream factories. A way to prevent hav ing specks in such butter is to strain the creuin when putting it into the churn. I have never known butter that was ' solidly packed to settle down an "inch or two” in the tub, and do not under stand why it should. It is true that if butter is packed warm, when the tem perature is much reduced, the butter shrinks to a certain extent, but not an “inch or two.” A good way to prepare tubs is to place them over a steam jet for a min ute, then fill them with cold water. After an hour empty out the water and ■•plinkle the inside < f the tub with salt, throwing out all except what sticks to tiiotub. Then immediately pack ill the butter. In this way the tubs do not get out of shape, as they would by soaking a long time, and the hoops are not as likely to lie hurst.—C. P. Goodrich in Breeder’s Gazette. A Churning Show.
