The INDEPENDENT, July 4, 2002 Registration open for fall Head Start Applications for the 2002- 2003 school year are still being accepted by Vernonia Head Start. Children must be at least three years old by September 1 to qualify. Four-year-olds are also eligible. In order to qualify, children must be from limited income households, or have a disabili ty and or special need. Head Start is federally funded and serves USDA approved meals twice daily. Many of you know Patty from seeing her in the office at Washington Grade School, but you may not know that she and Michael, her husband of 30 years, have two children and two grandchildren. Patty started cooking with her mom and has enjoyed it ever since. I think you’ll enjoy her dishes, too. CHOCOLATE SHEET CAKE This recipe was given to me by Grammy; it is always a hit and very easy to make. 1. Mix together in a large bowl: 2 cups flour 2 cups sugar 5 tbs. cocoa dash salt 2. Mix together in a smaller bowl, and set aside: 1/3 cup buttermilk 1 tsp. soda 2 beaten eggs 3. Place in medium pan and bring to a boil: 1/2 cup butter 1/2 cup vegetable oil 1 cup water Add buttermilk mixture to dry ingredients, stirring (It will be dry and lumpy.). Add boiling ingredients, mixing with a wire whisk as you pour. Mix well. Bake at 350 degrees for 15 to 20 min utes. Cake is done when center is moist and| slightly firm. Frosting (make while cake is baking): 1 lb. powdered sugar 1/2 cup melted butter termilk 1 cup ground nuts (optional) 3 tbs. cocoal 1/4 cup but Mix all ingredients. If necessary, add extra Patty Fetherston buttermilk, 1 tsp. at a time, until the consistency is creamy. Smooth frosting over cake, as soon as it comes out of the oven, being careful not to tear it. Cool and enjoy. MELON SALAD 3 cups cubed cantaloupe 6 cups cubed and seeded watermelon 3 cups cubed honeydew 2 cups seedless grapes (I prefer red grapes) Toss together with 1 cup of gingerale and 2 tbs. fresh lime juice. Refrigerate for at least 2 hours. BBQ TURKEY 1 FRESH turkey, do not use a pre-basted turkey. Seasoning Mixture (mix together): 2 tbs. salt 1 tsp. pepper 1 tsp. granulated onion 1 tsp. sage 1/2 tsp. granulated garlic Wash turkey, removing giblets and neck. Trim excess fat. Mix seasonings together in a small bowl. Separate skin from turkey by lifting gently from breast to back of bird, being careful not to tear it. Rub seasoning mixture on turkey between skin and bird. Mix more seasoning, if needed, depending on the size. For best flavor, refrigerate overnight. Place in a preheated barbecue with the breast facing up. I pre fer a charcoal barbecue, however, a gas barbecue works well. Use low heat in gas barbecue. Divide the coals, moving them to each side in a charcoal barbecue. Cook the turkey until juices run clear when pierced in the thickest part of the breast. Start check ing it at 1-1/2 hours for an average size bird. When juices run clear, remove turkey and place in a covered roaster or wrap with plastic wrap on a platter. Cover with a thick towel and let rest for 1/2 to 1 hour before carving. This turkey may also be oven roasted, adding 1 cube softened butter to the seasonings. Turkeys require longer cooking time in a conventional oven.
