County picks Detloff for undersheriff By Gladys Sharar Henry “Pat” Detloff, chief deputy in the Clackamas County Sheriffs department was the unanimous choice of the Columbia County Board of Commissioners to serve as temporary undersheriff in Co lumbia County. The county has been with out its top law officer since Sheriff George Hulit resigned last month after being con victed of three misdemeanor charges. Everyone hears hammers and saws at work all around Ver nonia, many of them wielded by the Mennonites who have come from across the country to give a hand to our hard-hit communi ty. I truly think they are God-sent. We also see Mennonite ladies in the kitchen at the Evangeli cal Bible Church, busily preparing three meals a day for 30 to 35 hard workers. The day I stopped by, there were four ladies busy preparing dinner: Lillian Yoder from Indiana, Martha Yoder and Barbie Zook from New York and Mary Ellen Wagler from Ten nessee. Here are some recipes they are sharing with us. PEANUT BUTTER DELIGHT Detloff will serve until the end of this year as a “loaned executive” from Clackamas County and will remain on the Clackamas County payroll, with his salary reimbursed by Columbia County. Detloff has 22 years in the Clackamas Sheriff’s department. A permanent replacement for Hulit must be chosen by the voters in November. There will be no primary elec tion for the non-partisan posi tion. B O R ED ? Becom e a vo lu nte er. CHICKEN STRATA 8 slices of bread, cubed 2 c. chicken, cubed 1/2 c. onion 1/2 c. celery 1/2 c. green or red pepper 1/2 c. salad dressing 2 eggs slightly beaten 1-1/2 c. milk 1 can mushroom soup dash of pepper 1/2 c. grated cheese Place half of bread cubes in bottom of baking dish. Combine chicken, vegetables, salad dressing and salt to taste and put on cubes, then add remaining bread cubes. Combine eggs and milk and pour over the last layer of bread. Chill overnight or at least 2 hours. Add mushroom soup. Bake at 350° for 50 minutes. Add cheese and bake until melted. 35 vanilla creme-filled cookies, crushed 1/3 c. butter or margarine, melted 1 - 5.1 oz. pkg. vanilla instant pudding 2 c. milk 1 - 8 oz. pkg. Cool Whip 1 c. creamy peanut butter Note: Do not use electric mixer to mix this, use wire whip. Crush cookies to make crumbs, setting aside 1/2 c.; add melt ed butter. Press the crumbs into bottom of 13" x 9" pan, put in freezer for 15 minutes. Combine pudding and milk, whipping until smooth; add peanut butter, whip again until smooth. Fold in Cool Whip, spread mixture over crumbs and sprinkle with reserved crumbs. Put in freezer for at least 6 hours. Before serving remove from freezer and keep in refrigerator for 4 hours. Cut in squares and serve. CREME CHEESE BROWNIES Mennonite cooks Lillian Yoder, left, and Verna Hostetler pre pare pizza for their working crew of 25-30 men. German choc, cake mix 1 egg 1/2 c. milk chocolate chips 1/2 c. sugar 1 - 8 oz pkg creme cheese, softened Grease jelly roll pan, (15" x 10" x 1/2"). Prepare cake mix as directed on package. Pour batter into pan. Mix remaining ingre dients and drop by tablespoons onto batter. Cut through batter with knife for a marble effect. Sprinkle with additional chocolate chips (nuts if desired). Dream Whip 24 Oreo cookies 1/2 c. hot water few drops green food coloring 1/4 c. margarine Crush cookies to make crumbs. Mix with margarine. Pat 2/3 of crumbs into a 9 x 9 dish. Dissolve jello in hot water. Add sugar and coloring. Slightly set. Whip Dream Whip until stiff. Slowly add slightly set jello. Pour onto crust. Top with crumbs. Freeze until ready to use, remove from freezer a few hours before serving. MANDARIN ORANGE CAKE 1 box yellow cake mix 4 eggs 1 c. oil 1 -1 0 oz. can mandarin oranges and juice Combine all ingredients; bake in a greased and floured 13" x 9" pan for 30 minutes or until done. I Topping: 1 med. can crushed pineapple and juice 1 - 3.5 oz. box instant vanilla pudding 1 - 8 oz. Cool Whip Mix all ingredients and spread on baked cake. CHICKEN COLE SLAW 1 -3/4 c. cooked, diced chicken breast 1 tb. toasted sesame seeds 1 pk. chicken Ramen noodles, crushed 2 green onions, cut in small pieces 1/2 c. toasted, slivered almonds 2-3 qts. cabbage, shredded Dressing: 3 tbs. sugar 1/2 tsp. pepper 1 tsp. salt 3 tbs. vinegar 1/2 c. oil Seasoning pkg. from noodles Combine chicken, almonds, cabbage, sesame seeds, onions, and noodles; toss to mix. Mix dressing ingredients and add just before serving. I
