Should it be done in the kitchen, one' of the finest family festive traditions suffer a setback. 4s. .orrcct bam carving is one of the easiest tricks to learn if the bead of the house will spend a few rnauies studying these photograph and instructions. And how neat carving job. performed at the table, will add to the smartness of your ham dinner this Easter! The ham should always rfc placed before the host with the shank bone at the carver's right. Place) the platter near the plates. Be sure the carving knife is sharp. Cat oat a wedge shaped piece at tha base of the carve near the shank end. 3 Starting at the wedge, cot ilica te the bone, slanting the knife somewhat from the surface to the bone. Continue te cut slices until the aitch bona it reached. (These an tha famous boneahoe cuts, the choicest of all. No single cut of meat of any description enjoys a greater popular ity the world over thao this symbol of good luck. If you have epc your knife well sharpened and If its edge has been preserved by fre- liuent use of the steel, you will have little or no trouble. Even tender ham reeds sharp cutting for neatness.) 5 Use the fork to steady the slices as the knife is slipped under to lift them onto the platter ready for serv ice. A 12-to-U pound ham should yield 14 or 15 good lised M-inch thick horseshoe cuts, and this num ber will be enough for most families on most occasions. If mora servings are needed, cut slices from the butt end. Cut smells slices from the thin tide of the ham, carving at right angles to long bone. Release ham slice from the bone by cutting lengthwise on either side of tha bone. These slices are smaller than tha horseshoe cuts bat make good ssrviogs.
