Irbh Stew (Serve 4 to S) Two poundi lamb (breast, ahank, shoulder or neck), 1 tea spoon salt, i teaspoon pepper, flour, 3 tablespoons fat or bacon drippings, 12 small onions, 8 carrots, 8 small potatoes, 2 cups water, 2i cups cooked peas. Cut meat In 1-Inch pieces. Mix flour and salt and pepper and dredge the lamb squares in the mixture. Heat fat in an Iron aklllct and brown the meat lightly. Add water, peeled on ion, and carrots, which have been scraped and cut in half, lengthwise. Cover. Simmer for X hours. Add potatoes, cubed, and cook for another half hour. Add peas, mix well, and turn the slew Into a casserole. Top with biscuit dough, cut in shamrock shape, place the casserole in hot oven (42S degrees F.) and bake for 20 minute or until the bis cuit era don and nicely browned. Shamrock Biscuit Topping For Stew One cup silted flour, li tea spoons phosphate baking pow der, s teaspoon salt, S table spoons shortening, 1-3 cup milk (about). Sift together flour, phosphate baking powder and salt. Cut in shortening until mixture resem bles coarse meal. Add milk to make a soft dough. Turn out on floured surface and knead gent ly for 30 seconds. Roll out to I MENU BREAKFAST: Grapefruit Juice, wheat cake, sausage, ayrup, coffee, milk. LUNCHEON: Kidney bean and onion soup, French bread, nut cookies, cheese, coffee, milk. DINNER: Irish stew, sham rock biscuit topping, buttered broccoli, rhubarb ahort cake, coffee, milk. inch thickness. With a sham rock-shaped cookie-cutter, cut three shamrocks in the middle of tha dough, the stem ends touching each other. Lift the biscuit dough carefully (use a spatula to hold the shamrock pieces in place) to tha top of the casserole. Trim off edge around the casserole with a sharp knife. Here's an idea for making something even better than stew: Rye Bread Dumpling Two cups soft rye bread crumbs, 1 teaspoon minced pars ley, 1 small onion, grated, i tea spoon aweet marjoram (option al). I teaspoon salt, s teaspoon pepper, i teatpoon baking pow der, 1 egg, well beaten. Mix Ingredient in order given. Drop by teaspoonful into hot stew. Cover and steam for IS minutes.
