Return to the top grate ot the oven, having a very moderate heat; the oven door may be left open if the oven is too hot. and if gas Is used It may be turned oft entirely. A hot oven will make the marshmallows tough. Let the cake remain in the oven- until marshmallows are melted. Squares ot gingerbread topped with mocha flavored whipped cream present a very festive appearance. Chocolate blends well with the ginger flour. For a pudding, serve with a hot chocolate sauce; for a cake spread the top ot the cake with chocolate confectioner's Icing. The little gin gerbread muffins Iced with chocolate frosting make a nice lunch box cake. For a layer cake bake the batter In two layers and when cold put together with orange marmalade or currant jelly. A vanilla flavored cooked cream filling is almost as good a combination.
