When business or pleasure
promises to keep you out of
the house all afternoon, plan to
sen this Swiss Steak Dinner.
Brown the meat, simmer and
cool in the morning or a day
ahead. Refrigerate until needed.
The meat w ill have time to ab
sorb all the bright subtle flavor
of convenient canned tomato
sauce that seasons it. Use liny
canned potatoes Uv.o ll-flurice
cans) and add with the vegeta
bles and mushrooms to the cold
meat. Heat in electric skillet, on
the range, or in a 350 degree
oven for a half hour. A salad
of grapefruit sections in lemon
lime gelatin could also be pre
pared ahead, ready to serve
with mayonnaise sparked with
lemon juice and paprika to
make it pink.
For dessert, remove a loaf of
date nut or chocolate nut bread
from its can and roll in alumi
num foil. Heat in oven or dou
ble boiler for 15 to 20 minutes.
Serve thick slices with vanilla
ice cream or vanilla-flavored
whipped cream. As a special
touch, sprinkle with shreds of
candied ginger.

2'j lb. round or swiss steak
3 tablespoons flour
! teaspoon garlic salt
I'j teaspoons salt
U teaspoon pepper
Va cup pure vegetable oil
1 onion, sliced
2 i8-ounce cans tomato
sauce
j cup water
1 '4-ounce) can mushroom
stems and pieces, un
drained 6 small white potatoes,
halved
1 (10-ounce) package frozen
mixed vegetables
1 teaspoon salt
Cut steak into 6 pieces. Pound
flour, garlic salt, salt and pep
per into steak. Brown well in
hot oil in large skillet or Dutch
oven. Add onion, tomato sauce
and water; cover and simmer
Hi hours. Add mushrooms and
potatoes; cook 20 minutes. Add
mixed vegetables and salt; sim
mer 15 minutes.
