DECEIVINGLY SIMPLE Salmon Alaska was inspired by f he famous ice-cream coated meringue dessert Icnown as -the Baked Alaska. No ice cream in this one just dark red Salmon from Alaska. Oregon Imagination Adds To Food Few foods bring as nunv valu able contributions to the table in significant quantities as canned salmon. Few foods are as appeal ing in flavor or can be served in such a variety of ways as canned salmon. And very few everyday foods can be trans formed into a glamorous dish at no greater cost to the cook than that extra ingredient imagination than canned salmon. SALMON ALASKA 3 csgs 1 pound ran salmon . cup milk !i teaspoon hot pepper sauce1 1 teaspoon Worcestershire sauce Vi teaspoon salt 2 teaspoons lemon juice 2 tablespoons chopped pars ley 2 tablespoons grated onion 4 tablespoons melted butter l'i cups soft bread crumbs ' In mixing bow l beat eggs, liquid from can of salmon, milk, hot pepper sauce, salt, and lemon juice until frothy. Flake and stir in salmon and remaining ingred ients. Line a 4-cup oven-proof glass or metal bowl with two 2-inch strips of aluminum foil, letting them overhang edge of bowl about I inch. Oil bowl and foil well. Pour salmon mixture into pre pared bowl and bake in a preheat ed 350 degree oven for 1 hour. Remove from oven and let stand for 5 minutes. Then loosen from sides of bowl and turn out onto oven-proof platter or pie plate with tne aid of the aluminum foil strips. Carei'uliy remove toii. j While loaf is baking, peel 4 to 5 medium putaicvs. cut into small' pieces and cook in boiling salted water for about 20 minutes, or until soft. Put potatoes through a ricer into a mixing bowl and beat in 4 tablespoons butter or marga rine heated to melting in lj cup milk. Add salt to taste. Cover the salmon mold with the fluffy mashed potatoes, brush lightly with beaten egg, and re turn to the oven for 15 minutes to brown. Serve with Cheese sauce. Serves 4 to 6. CHEESE SALTE 2 tablespoons butler or mar garine 2 tablespoons flour teaspoon salt i teaspoon paprika l'i cups hot milk 1 cup grated Parmesan cheese or cup finely diced natural cheddar In saucepan melt butter or mar- ganne. Stir in I (our. salt, and, paprika. Cook, stirring, until mis lure bubbles. Remove from heat' and add milk, stirring rapidly. Return to heat and cook, stirring, until sauce is slightly thickened. Add cheese and cook stirring, un-, til cheese is melted. PANS FOR PICKLES Do not use brass, copper, iron or galvanized utensils when mak ing pickles. Those materials can cause undesirable color changes. The experts suggest that enam- ciea ware, glass, aluminum, stain less steel or stoneware utensils be used ins'lead.
