GET OUT THE KETTLE Most housewives get the urge
to can end preserve when summer's luscious fruits be
come plentiful. This week apricots are on the markets in
various sizes. Frankly, we think there is no more satisfy
ing bit of business about homemaking than putting shin
ing jars of jams and jellies, wild plum preserves, apple but
ter from your own trees and relishes and pickles and red
pickled beefs on the pantry shelves. We just can't help
taking an occasional gloating peek when it is about time
for fall winds to rustle the leaves.
Apricot Canning
Time Is Here
The fruit with a special sum
mertime "golden glow" begins its
season soon. The distinctive, tan
gy flavor of Washington apricots
makes them one of the most
popular soft fruits of the summer
season. Perfect for eating out of
hand, for all picnics and sum.

joyment. The delicious apricot fla
vor is captured and enhanced in
the canning process and their
lovely golden color Is indeed a
delight to behold.
Besides universal appetite ap
peal, sunny apricots have otheri
values to offer. Chief among these.
is their nutritive value, for apri
cots provide one of nature's rich
est sources of Vitamin A, Thisi
is maintained at a high level
even in the canned fruit.
Apricots are one of the easiest
of all fruit to can, for they re
quire no peeling, and many
homemakers prefer to can them
whole, with the pit in. Many!
tantalizing jams, jellies, and
marmalades can be made from
apricots and they are always
pleasing when' simply served,
chilled from the jar, In their
own syrup.
CANNING APRICOTS
Tlie canning process for apri
cots is simple. Much timo and
effort can be saved by organiz
ing equipment and ingredients for
canning, ahead of time. Be sure
to have plenty of sugar, and an
ample supply of jars, lids and
rings on hand. Following are di
rections for the raw pack, boil
ing water bath process: Select
firm, plump, well developed fruit,
free from bruises. Wash fruit,
halve and pit, or pack apricots,
whole, unpitted If desired. Pre-I
pare syrup in the proportion of
l'4 parts sugar to two parts wa
ter. If your family prefers a
less sweet fruit, use one part su
gar to two parts water. Pack fruit
into clean, hot jars, cut side down.
Cover with boiling syrup to with-
hi inch of rim of jar. Wine
rims clean, adjust lids and seal
according to manufacturer's di-l
rections. Process jars in boiling
water bath 25 minutes for pints
and 30 minutes for quarts, begin
ning counting time atter water re
turns to a full rolling boil. Water
should be at least one inch over
tops of jars.
After processing, remove iars
from water and allow to cool
well separated and away from
drafts. When jars are cool, test!
lids for seal. Store in cool dry.

On a hot summer day, a cool,
cool salad is a psychological heal
beater, especially if its made of
gelatine with cool colors.
Tlie idea for Peach and Grape
Emerald Salad might have been
born on the Emerald Isle itself.
But actually, the salad came to
life right here through a clever
combination of lime gelatin, cling
peaches, red grapes and cottage
cheese.
How does this salad come out
of the mold looking so perfect
and colorful?
Part of this lime-flavored gela
tin is partially set in the bottom
of a mold and cling peach slices
are pressed into it. Sliced r e dl
cranes and any remaining peacn
si ces. which have Been aicea,
are added to the remainder of
(lie gelatin when it is partially
set. Then tins is poured into me
mold and chilled.
When the 6alad is firm, it is
unmolded on a serving plate and
surrounded with lettuce leaves
filled with snowy white cottage
cheese. A basketful of crisp rye
wafers is a good accompaniment,
adding a crunchy texture.
This salad is ideal for "help-
voursclf" serving and adds a
bright note to the buffet dinner
table. It also goes well as
luncheon fruit salad; it is re
fleshing and light for lunch, but

EMERALD SALAD
(0-10 servings)
Salad mold, 6-cup
2 cups (l-oz. can) sliced
cling peaches
2 3-ounce packages lime-flavored
gelatin
1 cup boiling water
1 cup peach syrup
2 cups cold water
1 red maraschino cherry
1 cup fresh grapes, seeded
and halved, or 1 cup (8
li-oz. can) grapes, drained
Lettuce j
2 cups cottage cheese
Drain peaches, reserving syr
up. Dissolve gelatin in boiling
water; blend in peach syrup and
cold water. Pour one cup ot gel
atin mixture into mold which has
been rinsed in cold water; chill
until partially set. Press 12 peach
slices into gelatin and place cher
ry in center. Dice remaining
.peaches; combine with grapes and
mix into remaining gelatin. Pour
into mold; chill until firm. Un
mold on serving plate and sur
round with lettuce cups filled with
cottage cheese.
