1-3 cup boiling water
H cup mashed ripe banana

have been plentiful this spring
and summer starting early with
Ihose from as far away as Flor
ida, Georgia, and Mexico, and
later from Arizona and California
Two-thirds of our Oregon-grown
watermelons and nearly forty per
cent of the cantaloupes come to
market during August and now is
the time tn enjoy your fill of these
Oregon melons. Locally grown
melons usually are well matured
before picking, making for es
pecially good eating because the
sugar content of melons does not
increase materially after picking.
Umatilla County is Oregon's ma
jor production area for watermel
ons, klondyke is the main variety
grown in the Hermiston area, and
these melons are noted for sweet
ness, redness, small seeds, and
fine crisp texture. Some melons
arc also grown in Morrow, Doug
las, and Malheur counties. Peo
ple have learned they can count
on the goodness of Dillard eanta
loupes from Douglas County.
How do you choose good mel
ons?
Cantaloupe: Vmc-riped canta
loupes have a saucer-liko shallow
depression at the end which is
formed when the melon separates
from the vine. A mature (aula
loupe breaks ea.-ily from Hie vine
less mature ones have a rough
scar with a portion of stem ad
hering to the melon.
You have (lie promise of a sweet
mature cantaloup when the net
ting on the surface of the melon
is coarse, corky, and stands mil
in bold relief over the entire sur
lace. Distinctive, pronounced canta
loupe fragrance goes along w ith a
rie melon. However, (Ins is not
lool-pronf. If the melon is cold, you
mav not be able to delect much
aroma.
MELON BOAT SALAD
Place boat shaped sections of
cantaloupe H ind removed) on bed
of salad greens. Fill boat with
seasonal fruits (blueberries, peach
slices, grapes, and honeydew or
watermelon balls.) Garnish ends
of boat with sprigs of mint. Serve
with a sweet French dressing, or
a scoop of lemon, orange, or lime
sherbet.
PACIFIC RAINBOW DESSERT
Serve generous wedges of a
chilled melon (cantaloupe, honey-
dew, Persian, casaba or cran
shawl each topped with three
small scoops of vari-hued sher
bets, lemon, lime, pineapple, or
raspberry. Garnish with fresh ber
rics or grapes and a sprig of
fresh mint.
WESTERN CHICKEN SALAD
2 cups diced, cooked or can
ned chicken
1 cup finely chopped celery
U cup chopped green pepper
2 tablespoons lemon juice
i cup French dressing
' cup mayonnaise
a teaspoon salt
t large cantaloupe
1-3 cup toasted, slivered al
monds Iceberg Lettuce
Combine chicken, celery, green
pepper, lemon juice, dressings.
and salt. ('hill. Serve on rings of
chilled peeled cantaloupe ar
ranged on cusp lettuce. Sprinkle
salad with almonds. Serves 4.
