of meat end amount of edible
meat per pound. If meat has
much bone and gristlec, a pound
may serve only one person; If
the nit has no bone, it may serve
as many as five.

few of them in relation to other
cuts (supply) they can command a
high price. But there are other
cuts of steak that cost less and
if properly prepared can even
be broiled like the higher-priced
cuts.
For years cooks have known
the possibilities ol tenderizing;
beef by marianating it in flavor
ful liquids, and many recipes call
for this process. Recently, how
ever, a lendenzer maile from
reimcd papain, from the papaya,
has been available.
The papain separates the con
nective tissues of meat, allowing
the tissues to expand and result
ing in faster cooking, reduced
shrinkage, retention of juices and
greater tenderness.
Thus with the help nf the ten-
derizers on the market it is pos
sible to broil round steak or
beef chuck and have it as tender
as tenderloin. To prepare steaks.
sprinkle meat tendcrizer evenly
on all sides (as you would salt1,
allowing about 'j leasioon per
pound. Do not add salt. Fierce
all surfaces with a fork at in
tervals of 1 inch. Tins allows
the tendcrizer to penetrate ami
seal in the juices. let stand al
room temperature for 30 to 40
minutes for cuts up to t inch
thick, 1 hour for thicker cuts.
Or if you prefer, cover loosely
and refrigerate overnight. Pan or
oven broil to your taste as you
would the naturally tender cuts.
Marinades are another tasty
and tenderizing way of serving
these economy steaks. In fact

The following marinade is from
our Cow Belle President Iiise
Lane:
cup soy sauce
'i tablespoon honey
2 tablespoons Vinegar
(i teaspoon ginger
1 cloves crushed garlic
W cup salad oil
Combine all ingredients, pour
ever steak and let stand several
hours. Drain marinade and broil
steak to taste. She recommended
this for flank steak, but H is
suitable for any.
Japanese teriyaki is a good
marinated steak recipe:

2 lbs. sirloin steak or ten
derized round steak, thin
ly sliced
2 teaspoons powdered ginger
2 garlic cloves, minced
1 medium-sized onion, finely
chopped
2 tablespoons sugar
'i cup soy sauce
U cup water
Cut steak into portion size
pieces. Combine ginger, garlic, on
inn, sugar, soy sauce and water
Stir over low heat until sugar
dissolves, then pour over meal
Let stand (or 2 hours; drain
Broil for 1 to 5 minutes on each
side.

Press evenly into a greased or
foil lined 10" x 5" X 3" pan
chill and cut into squares or
form into 1 balls, using I level
tablespoon for each. Roll in finely
choi)cd nuts, if desired, or press
nut half into top of each.
Chill till firm.

In a saucepan, blend together
sour cream and sugar. Cook over
medium heat, stirring occasiona
ly. until mixture reaches a soft
ball stage when tested in cold wa
ter (2.12 degrecsi. Remove from
heat; cool to lukewarm. Add va
nilla; beat until mixture becomes
creamy and holds shape. Stir in
nuts; pour into pan. When cool cut
into squares.
VARIATIONS
Coconut Sour Cream Candy:
Substitute I cup toasted coconut
for the walnuts.
Raisin Sour Cream Candy: Sub

1 can Green Cake Decorator
Strawberry Cream Filling
1 cup whipping cream
2 tablespoons powdered su
gar 1 package HO oz frozen
strawberries
Rake angel food as directed on
package. Cool completely. Split
cake to make three layers and
fill with Strawberry Cream Killing.
Prepare frosting mix as direct
ed on package. Fill an ice cream
cone with a small amount of
frosting (enough to make flat lop'
und place top side up in center ol
cake. Frost sides and top of cake
using petal shape motion in frost
ing. Frost top and around sides
of cone to form a platform for
the pink petal nosegay. Decorate
cake with pink and green cake
decorators.
Using star tip place ring of pink
rosettes around base of cone. Ac

flower nosegay on top using petal
tip. Create vines with green cake
decorator; place pink rosettes on
