A I Turn PEARADISE COFFEE CAKE Coffee Cake Rich With Fruit It's a happy morning when the spicy aroma of fresh, hot pear coffee cake beckons to early birds and breakfast skippers alike. This delightful batter coffee cake brines even the johnny - come- latelys to the table on time, for it features canned pears in cinnamon crispy topping. The easy beaten batter is rich with all the flavor so characteristic of a yeast bread. Pacific Coast Canned Pears perform wonders as that "im portant" ingredient in many rec ipes. Desserts, salads and meat accompaniments take on a spe cial clow when the fruit they fea ture is canned pears. Easiest tilings are often best, and canned pears certainly fit easily Into the scheme of meal planning. The rich levulose sugars In pears give them high energy val ues, and at the same time, canned pears are relatively low in calorics. For a quick mid-day snack, nothing could be as sim ple as opening a can of pears. And yet, few snacks could be as healthful or satisfying. PEARADISE COFFEE CAKE 1 can U pound) Bartlett pear halves i cup milk Vt cup sugar i teaspoon salt 2 tablespoons butter 1 package yeast, active dry or compressed Vi cup warm water 1 egg, well beaten Hi cups sifted flour TOPPING 2 tablespoons brown sugar 4 teaspoon cinnamon ' teaspoon nutmeg 1 tablespoon butter Drain pears, reserving syrup. Scald milk. Stir in sugar, salt and 2 tablespoons butter. Dissolve yeast in water. Stir in lukewarm milk mixture. Add egg and flour. Beat with electric mixer on high speed or by hand until smooth. Spread dough evenly in greased 8-inch square pan. Slice pear halves thin and arrange over top of batter. Sprinkle with mixture of brown sugar, cinnamon and nutmeg. Dot with butter. Cover and let rise in warm place, away from draft, until double In bulk or about 40 minutes. Bake in 400 de gree oven for 10 minutes; reduce heal to 350 degrees and continue to bake 20 to 25 minutes. While coffee cake is still warm, drizzle with a thin glaze made of pow dered sugar and reserved pear juice. Fold in cookie crumbs, nut meats and vanilla and spread in buttered 9" pie plate. Bake 325 degrees for 35 minutes. Cool thoroughly. Serve Willi sweetened cream on each wedge; or spread sweetened whipped cream over top, chill 3 to 4 hours, and garnish with curls of shaved unsweetened choc olate. SAVANNAH TOFFEE TORTE 1 box Savannah cookies, rolled 'a cup chopped nutmeats ' pound oleo or butler 1 cup powdered sugar l'i square baking chocolalo 3 eggs pinch of salt Cream butler and sugar. Add beaten egg yolks. Melt chocolate and add to above with salt. Fold in stiffly beaten egg whites. Grease 8x8x1" pan. Sprinkle half of cookie crumbs and nuts on bottom. Pour mixture in.
