PAGE 11 ESTIVE Good Fish Recipes SHRIMP FRIED RICE 1 egg 2 tablespoons margarine 2 green peppers, sliced 1 red Spanish onion, sliced 1 pound shrimp, cooked 1 cup cooked rice 1 tomato, quartered 2 tablespoons cornstarch i cup cold water 3 tablespoons soy sauce In a large skillet, fry egg us ing one tablespoon margarine. Remove egg from skillet and keep warm. Melt remaining one table spoon margarine in the same skil let; add green peppers and Span ish onion. When vegetables arc tender, add shrjmp, rice and to mato. Combine cornstarch, cold water and soy sauce; stir into mixture. Continue cooking until mixture is thickened. When ready to serve, transfer to a large heatproof bowl. Cbt fied egg into strips and garnish top. Makes 4-6 servings. LOBSTER CANTONESE 3 tablespoons corn oil 1 clove garlic, sliced ' pound ground pork 4 lobster tails, about 8 oz. each 4 green onions cut into 'i inch dices 1 tablespoon soya sauce 1 teaspoon ground ginger 'i teaspoon salt 2 tablespoons corn starch 2 cups beef broth Or bouillon 1 egg, slightly beaten Brown garlic and pork in hot corn oil in skillet, over low heat. Cut lobster meat into Vi inch pieces and add with onion to skillet. Cook 10 minutes; stir oc casionally. Combine remaining in gredients except egg, stir into skillet. Cook until sauce is thick ened and clear. Stir in egg. Four servings. 2 large onions, chopped 2 green peppers, chopped 2 No. 2 cans tomatoes or okra 2 teaspoons salt U teaspoon pepper 1 bay leaf 1 cup cooked rice Let fillets thaw on the bottom shelf of the refrigerator or at room temperature. Meanwhile, melt butter in a saucepan. Add onions and peppers and cook un til tender. Stir in canned toma toes and okra and seasonings. Cook over low heat at least 15 minutes (over-cooking doesn't hurt gumbo so long as the fish hasn't been added i. Cut thawed fillets into cubes. About 10 minutes be fore serving time, add fish and rice to gumbo. Cook about eight minutes or until fish flakes easily when tested with a fork. Makes four servings. iui;o e 3 . .
