Good Beef Recipes MARINATED BEEF l'z to 2 pounds beef, cut into four to six steaks Salt and pepper 6 tablespoons of butter l'i tablespoos of vinegar j tablespoon mustard yel- losv mustard' 1 bay leaf Some cloves to taste 1 medium size onion Rub the meat with salt and pep per. Heat butter in a heavy skil let until it is real hot. and thor oughly brown the meat on both sides. Add the sliced onion at the last minute, so that it fries lightlv without getting brown at all. Place the meat in a Dutch oven, dissolve the remainder in the skil let with some water, and pour it over the meat. Add vinegar, mus tard and spices, cover and allow to smother gently for two to three hours, or until very soft, while turning every 30 minutes. Serve on a warm platter in a ring of rice or mashed potatoes. Strain the sauce if desired and pour over the meat. ROUND STEAK FRITTERS 1 pound lean beef 1 egg 1 tablespoon flour '. cup milk Salt and pepper Cut beef in 2 inch squares 1 inch thick. Pound thoroughly. Make batter of remaining ingre dients. Dip beef squares in bat ter, then in cracker crumbs. Drop into hot deep fat and cook until brown. Drain on paper tow el. Serves 4. ARIZONA ROUND STEAK To cook thick round steak, about 2 pounds, brown on both sides in heavy skillet into which meat drippings have been added. Salt steak and pour on top of steak 1 can Ortega chili sauce. Cover tightly and let simmer un til well done, about 40 minutes.
