Often when the amount of mon-j
ey which one can spend for fam
ily meals has to be w atched care
fully, the tendency is to buy and
serve the same foods over and,
over again. Actually, there are
many foods of equal nutritive
value and cost which make it pos
sible to have variety in meals
even though one is counting pen
nies. Take meat, for instance.
There's hardly a month through'
out the year when some type of
fresh meat is not a real good
buy. It is wise, of course, to
make use of that kind of meat
often while it is low in cost.
However, in hunting best buys I
in the meat line one should not
overlook the canned meats on the
grocery shelves. Luncheon meat
corned beef, and chopped ham
for instance, are all meat, and on
a per ounce of edible meat basis
they are usually sufficiently lowj
in price to be considered very;
good food buys. Such canned meat
products are well liked and servel
to add variety to family meals
Other meat products such as
stews, hash and meats with era-
vy may also be used to vary
meals occasionally and they are
often low in cost. The protein
value of these latter meat prod
ucts can be upped when they arc
used in a main dish prepared
with undiluted evaporated milk.

milk concentrate can be used with
canned meals to prepare taste-
pleasing and attractive main dish
es. Being low in cost, evaporated
milk is thrift-minded. More than
that, part of the needed daily
quota of milk is assured in the
diet of every member of the fam
ily. Here are some dollar - savin:

CORNED BEEF
AND VEGETABLE HASH
3 medium potatoes, peeled
and cubed
4 carrots, peeled and sliced
9 medium onion, sliced
Lcup water
' cup shortening
cup flour
i teaspoon salt
U teaspoon pepper
1 tall can evaporated milk
12-3 cups)
1 can E ounce) corned beef
Place potatoes, carrots, onion
and water in a large saucepan
Bring water to a boil, cover pan
with lid and cook- over medium
heat until vegetables are tender,
about 15 minutes. Stir in shorten-i
ing until melted. Remove from
heat and stir in flour, salt and;
pepper, mixing well. Slowly stir!
in evaporated milk. Break corned;
beef into chunks with a fork. Add
to vegetable mixture. Return to
heat and cook over low heat, stir
ring occasionally, until thickened.
Makes six servings.
CREAJIED MEAT .VD EGGS
! tablespoons shortening
It cup chopped green pepper
1 small onion, chopped
3 tablespoons flour
1 tall can evaporated milk
1 2-3 cups I
1 tablespoon prepared mus
tard
teaspoon pepper
1 can (12 ounce) luncheon1
meat, cut in W-uich cubes
2 to 4 hard cooked eggs, cut
in small pieces
Melt shortening in a saucepan
Add green pepper and onion, and
cook over low heat until onion is
tender. Remove from heat and
stir in flour. Slowly stir in evap
orated milk. Return to heat and
cook, stirring occasionally, until
mixture thickens. Add mustard
and pepper, then carefully stir in
luncheon meat and eggs. Continue
cooking and stirruif until mix
ture is hot. Serffe over souare. Af
cornbread or toast. Makes $kx
servings.
CORNED BEEF
AND MACARONI DINNER
2 cups uncooked elbow mac
aroni 3 quarts boiling water
1 tablespoon salt
cup shortening
1 small onion, chopped
3 tablespoons flour
'i teaspoon salt
t teaspoon pepper
1 tall can evaporated milk
(1 2-3 cups'
1 cup shredded sharp Ched
dar cheese ('4 pound 1
1 tablespoon prepared mus
tard 1 can 112 ounce) corned beef,
broken into chunk!:
Slowly add macaroni to t h e
three quarts bo Mm 5 water to which
the one tablespoon salt has been
added. Boil briskly until macaro
ni is tender, about seven .o eight
minutes. Drain. Let macaroni
sftind in cold water for 10 minutes,
then drain again. Set aside. Melt
shortening in a saucepan. Add
onion, and cook over low heat
until tender. Remove from heat
and stir in flour, the teaspoon
salt and pepper. Slowly stir in
evaporated milk. Cook over me-
dium heat, stirring constantly, un
til thickened. Stir in cheese and
mustard. Heat over low heat, stir-1
ring constantly, until cheese is
melted and sauce is smooth. Add
macaroni and coined beet and
mix well. Heat to serving tem
perature pver low heal, stirring
occasionally. Makes six servings.

dium size saucepan and heat over
low heat. Add enough of the gravy
to the flour to make a smooth1
paste, then stir mixture into the
H)rk and gravy in the saucepan.
Remove from heat. Slowly stir in
evaporated milk. Cook over low
heat, stirring occasionally, until
thickened. Serve hot on toast.
Makes four servings.

A WHIP-UP This unusual dessert omelet is folded over
fried pear slices and topped with a snowy meringue.
Meringue Omelet
- With Fresh Pears
A spectacular dessert, whipped
up for a party on a moment's
notice. Simply make an ordinary
four-egg omelet lor a larger one
for a larger group), fold over
sugary fresh pear slices fried in
butter, top with a fluffy me
ringue and pop under the broiler.
PEAR OMELET MERINGUE
3 fresh California Barlletts
U cup butter or margarine
U cup sugar
Cinnamon or nutmeg (op
tional )
,4 whole eggs
2 tablespoons water
Salt
2 egg white meringue
Core pears and slice them
thinly ino need to peel their ten
der skins I. Fry them carefully in
butter and sprinkle with sugar
and spices. Now beat the eggs
and water with a fork, season
and pour into a hot buttered ome
let pan. When the eggs are al
most set, spoon fried pears on
lower half, fold top portion over
pears and carefully slip on to
oven-proof serving dish. Pile me
ringue on top and slip under pre
heated broiler for a minute or
so until meringue is golden. Serve
immediately to four.
LEFTOVERS HO!
Casserole lovers will love the
simple idea of taking any last
night meat or fish and making
a quick and easy one-dish meal
The trick, use fruit juice! Apple
or tomato juice mixed with seas
onings makes a wonderful binder
for meats, vegetables, and rice
or noodles. Put them in the pot,
pour the juice over, dot with but
ter, top with crumbs and bake
After one or two tries, the whole
variety of juices available will pre
sent new, original ideas for com
binalions.
COLLEGE BITS
The college crowd is packed
and on its way for another year.
Now is the time to start thinking
about "goodies" to send off to
your hard-working student. Bar
cookies and brownies are excellent
for mailing. Bake them in an
aluminum toil-lined pan that you
can lift right out when the cook
ics have cooled. Leave them un
cut, pack them up and send 'cm
off.
Include several little coffee
cakes that you've baked in empty
coffee cans. Just prepare a fa
vorite yeast coffee cake, and till
each can one-third full of dough
after the first rising period. Al
low the little coffee cakes to rise
until doubled then bake as usual
Remove from cans to cool then;
return to the cans, pop on th
lids and your little coffee cakes
will slay fresh and whole en
route.
