ORANGE-ALMOND STIFFING
Yield: Stuffing for 121b. Iurkf
1 stick (' cup' butter or
margarine
8 cups toasted bread cubes
1 cup fresh orange sections
1 cup toasted, slivered al
monds 4 cup chopped onion
2 teaspoons salt
1 teaspoon poultry seasoning
M teaspoon savory
Dash of pepper
2 eggs, beaten
Melt butter in a saucepan. Com-:
bine bread, orange sections, al
monds, onion, and seasonings.
Pour melted butter over bread.
Add eggs and blend well. Stuff
bird just before roasting.
TLRKEY CURRY
Yield: 6 servings
3 cups diced roasted turkey
4 cups milk
2 cups shredded coconut
i cup butter or margarine
'a cup chopped onion
2 tablespoons flour
1 teaspoon ginger
1 teaspoon salt
1 tablespoon curry powder
l'j cups chopped unpared ap
ple 4 cup chopped celery
1 cup toasted, slivered al
monds Combine milk and coconut. Let
stand for 20 minutes. Then bring
milk and coconut to a boil; re
duce the heat and simmer for
10 minutes. Strain. Set coconut
aside to serve as an accompani
ment. Melt butter in a sauce
pan, Add chopped onion and cook
for about 5 minutes. Blend in
flour and seasonings. Gradually
add the milk. Cook, stirring con
stantly, until thick and smooth.
Stir in the turkey, apple and cel
ery. Cook about 5 minutes or
until turkey is heated. Serve over
rice with almonds sprinkled on
top.
