Smith, director of Ihe U.S. Department of Agriculture's fruit and vegetable division, told fresh potato growers, shippers and wholesalers that the only way they can compete with the rising pro cessed potato market is to im prove fresh potato quality. Speaking before Ihe United Fresh Fruit and Vegetable As sociation's potato division in Chi cago, he declared that "greater emphasis must be placed on cleanness, absence of defects and uniformity ot sizes. "Consumers do not understand orade tolerances and sorting prob lems." he continued. "They mere ly expect U.S. No. 1 to be lop quality potatoes with desirable size and good appearance. The National Potato Council1! chart of U.S. production and ulili lation of designated potato crops shows why fresh polalo men are so alarmed about processed pota toes. Processed potatoes, according lo the director, had risen in 1939 to 30.7 per cent of total per capita potato consumption, compared with 11.8 per cent in 19.il, while fresh notatocs dropped to 74.5 pel- cent in 1059, compared with 83.3 per cent in ni.n. Top each with a spoonful of fruit cocktail. Sprinkle with 1 tablespoon sugar mixed wilh cinnamon. Bake in hot ovei0(425 degrees) about 25 min utes. Let stand about 5 minutes, before removing from pans.
