WINTER ENTREE Winter winds haven t been so sharp in the Klamath Basin as dur ing normal winters, nor has the Basin been plagued with snow, but hearty dishes still taste mighty fine during the late winter months Nallcy s Beef Stew is a good case in point. Although it is a year around dish, beef stew is usually asked tor by the family more fre quentiy during the winter. Open a can of Nalley s Beef Stew, heat, and then serve with home made noodles and a tossed salad and you have a quick meal. (Of course, it s quicker if you use packaged noodles, but making them yourself is fun and they have that solid goodness that just "goes with" Nalley's Beef Stew). NOODLES There is a basic recipe for home made noodles. To each whole egg used, add the amount of liquid which half of one eggshell will hold. Use cream, milk or water for the liquid. Add a half of teaspoon of salt (you'll have to salt the water they are cooked in and then sail the final dish, anyway). Beat the eggs and cream and then add flour to make a soft dough. Divide into, at least two parts and roll out each part and cut into noodles. We use a floured pastry cloth and a covered rolling pin and cut the noodles with the kitchen shears, dipping the blades into Hour now and then. The solt noodles are ready to cook as soon as cut and they are more tender if you don't have to work too much Hour into them. Cook in -.a large pan. of rapidly boiling water until just done 6 lo 10 minutes, as a rule, if they aren't too thick but don t overcook. Drain, dress with butter and serve with Nalley's Beef Stew, pip ing not. For two people, start with two eggs but you may find you're a tour-egg-noodle family.
