JANUARY 1. 1959 - COOKIES "Apricot Buttons" are rich, de 13 cup sugar cup shortening 1 egg V teaspoon vanilla 1 cup sifted all-purpose flour H teaspoon salt Finely chopped nuts or chopped coconut (about 3-4 cup) Rinse apricots, cover with wa ter and boil until very tender. Mir yolk and vanilla into creamed m xture. Sift flour with salt and mix into creamed mixture. Shape ino about 2 dozen little balls. Beat egg white until frothy. Dip ja Is in egg wnite, then roll in nuts or coconut. Place about 2 inches apart on lightly greased Diking sheet. With handle of spatula or with thumb, press a deep dent in center of each. Bake :n slow oven (300 degrees) about 30 minutes. Remove with spatula t? wire rack to cool. Fill centers while still warm with cooled apri cot mixture. Makes about 2 dozen cookies.
