I ORANGE RICE IMPERIAL 2'z cups milk 1 1-3 cups US-ounce box) pack aged pre-cooked rice H teaspoon salt 1 envelope (1 tablespoon) gel atin 3 tablespoons cold water 2 egg yolks M cup sugar 1 teaspoon orange extract l'i teaspoons grated orange rind 3 tablespoons Cointreau or orange juice I cup whipping cream Scald milk in saucepan. Add rice and salt. Mix just to mois ten all rice. Cover; remove from heat. Let stand about 5 minutes, fluffing occasionally with a fork. Meanwhile, soften gelatin in cold water. Combine egg yolks and su gar. Add a few spoonfuls of the hot rice mixture to egg yolks and sugar; mix well. Then add egg yolk mixture to hot rice in sauce pan. Add the softened gelatin, orange extract, grated orange rind, and Cointreau; mix well. Chill until mixture begins to thick en. Whip cream and fold into thick ened rice mixture. Pour into 4-cup mold to set. Chill until firm. Makes 8 servings. Garnish with additional whipped cream, if desired.
