But, to glamorize her menu also, she must select dishes which not only are tasty but are also eye-appealing and appropri ate for the occasion. If you are planning to entertain outdoors this season, you might want to try this recipe for Black Bottom Pie, an attractive and rich-; I delicious dessert which requires no baking. The delight of every hostess, it pleases guests too, for its refreshing goodness makes it the perfect complement to any summer dinner menu. I Crush 4 cups Corn Flakes into fine crumbs. Blend , cup soft butter or margarine and 2 table spoons sugar; stir in Corn Flakes crumbs and mix well. Press even ly and firmly around sides and bottom of a 9-inch pie pan. Chill. BLACK BOTTOM PIE FILLING - 1 tablespoon unflavored gel atin i cup cold water ?4 cup sugar 4 teaspoons cornstarch 4 eggs, separated 2 cups milk, scalded 2 squares 12 ounces) un sweetened chocolate 'i teaspoon vanilla flavoring i teaspoon rum flavoring teaspoon salt ' teaspoon cream of tartar Soften gelatin in cold water. Combine cup sugar with corn starch. Beat egg yolks until light; stir in scalded milk slowly. Grad ually stir in sugar mixture. Cook over hot water, stirring occasion ally, about 20 minutes until cus tard coats a metal spoon heavily. Take out l'.j cups of custard, keep remainder hot. Melt chocolate over hot but not boiling water; add to the 14 cups custard, beat ing until well-blended and cool. Stir in vanilla. Pour into chilled pie shell. To remainder hot cus tard, add softened gelatin, stirring until dissolved. Cool until mixture is ready to set. Stir in rum flavor ing. Beat egg whites with salt until foamy. Add cream of tartar and beat until stiff but not dry. uradually beat in remainini! ii cup sugar. Fold into custard mix lure. Spread gently over choco late tilling. Chill until set. To serve, whip 1 cup heavy cream; fold in 2 tablesDoons confectioner's sugar. Spread over pie. Sprinkle with 4 square of unsweetened chocolate, shaved into curis.
