The idea sounds intriguing and one thinks it would be a good idea to develop. Here are some ideas from (he National Dairy Council on seasoned butters and how to use them: PARSLEY BUTTER Combine U pound (1 stick) of butter, melted, 1 tablespoon ienv on juice and V4 to cup fine ly minced parsley. Use for sea soning potatoes, noodles, shell fish and fish. MUSTARD BUTTER Combine ' pound (1 stick) but ter, softened, with Yt cup of pre pared mustard. Use your choice of mustard so that it is as hot or mild as your taste directs. Use as a spread for sandwiches and can apes: as a seasoning for fish. ham and eggs. LEMON BUTTER Combine V pound (1 stick) but ler, melted, 1 tablespoon lemon juice and I teaspoon grated lem on juice. Use for seasoning fish, shellfish, chicken, veal and vegetables. GARLIC BUTTER Combine ' pound U stick) but ter, softened, and 1 small clove of garlic, thoroughly mashed. Use lor seasoning rrench or other crisp-crusted bread;, steak or fish or shellfish. HERB BUTTER Combine 'i pound (1 stick) but ter, softened, with 1 teaspoon mixed salad herbs. If. using fresh horns, such as rosemary, etc., chop the leaves fine; if using dried herbs, rub in the palm of the hand before adding to the butter. Your own experiments will dictate your final recipe. Try tarragon, sweet basil and oregano as well as rosemary and thyme. Use for spread for canapes, for seasoning poultry, veal and vegetables: for seasoning stuffings for meat, poul try and fish. CHEESE BUTTER Combine pound (1 stick) but ter, soffened, with desired amount of grated sharp cheese such as Parmesan or Romano. A mashed clove of garlic may be added or '4 cup finely chopped chives. Use frr seasoning French bread, as spread for canapes or as season ing for vegetables such as steamed cauliflower. FRIED POTATOES . Wash hut do not peel, then slice the little round red potatoes for frying. Fry in butter, add salt and pepper and put the lid on the pan over medium heat for about five minutes to let them cook through more quickly. Remove lid and finish cooking. ROCKY ROAD PIE Prepare cooked chocolate pie filling according to your recipe or package directions. Stir miniature marshmallows and coarse ly, chopped walnuts into the hot filling.
