OREGON PAGE 3 B 5 .-r CELEBRATE JUNE AS DAIRY MONTH A BIG PITCHER of chocolate milk, chilled, of course, com pletes the dessert course for young and old alike during June Dairy Month or any other time. The dessert has a custard base and the recipe is a variation of the time honored Tipsy Cake. With the ending of the school year, the junior members of the family have time on their hands. Many mothers take the opportun ity to interest both the boys and gins in tne an oi coomng. Custards are easy and fun to make and delicious, delicate des serts can be the result. There is the added advantage of getting more milk and eggs into the menu by serving custards. Here is a dessert the yeung cooks can make and enjoy eating. It's colorful and different and combines fresh fruits, sponge cake and del icately flavored custard. The soft custard is prepared in advance. It may be flavored with vanilla or lemon extract or rum or snerry flavoring, as desired. The SDonee cake may be made the same day or days in advance. The entire dessert shouod be pre pared several hours before serv ing to allow flavors to blend. The following recipe serves six. Freeze Strawberries FREEZE QUICK nd EASY In VAPOCAN Frttilng Container SOFT CUSTARD 6 egg yolks H cup sugar l teaspoon salt 2 teaspoons all-purpose flour 2 cups scalded milk 1 teaspoon vanilla or other flavoring For adults only, flavoring may Be '4 cup of rum or sherry. Beat egg yolks, sugar, salt and flour to blend thoroughly. Pour scalded milk slowly into this mix ture, stirring constantly. Set over simmering water in double boil er (water should not touch upper pan holding custard mixture). Or. cook over very low heat in a heavy saucepan, stir constantly until mix ture coats the spoon thinly. Cool quickly by pouring custard into chilled bowl and place in refrig erator or set pan with custard into a pan of cold water. Immediate cooling of the custard is import ant to prevent curdling. After cus tard is cool, blend in the flavoring desired. Prepare six sponge cake sand wiches, using two slices of cake and about one tablespoon of jelly or preserves for the filling. (Wild plum preserved are super in this) Cut each "sandwich" into s-inch strips. Prepare each serving in a sher bet or dessert dish by placing a layer of sliced strawberries and then sandwich strips around sides and over the strawberry layer. Fill dishes about half full with the custard. Let stand about 10 min utes to allow some of the cus tard to be absorbed by the cake. Then add remaining custard and, if desired, any remaining straw berries. Chill several hours or overnight. Garnish each dish with fresh strawberries at serving time. Makes six servings. Serve w ith a big pitcher of chilled milk or chocolate milk. CHICKEN BROTH Combine 2 cups chicken broth, V cup dry vermouth, 1 tablespoon fresh lime or lemon juice, V tea spoon grated lime or lemon rind. salt to taste and heat slowly until piping hot. Serve with thin avo cado slices or balls in each cup. ASPARAGUS Add a tablespoon of lemon juice to the butter you melt to serve with fresh asparagus stalks. U.S. POLICY CRITICIZED VIENNA. Austria (AP) Chan cellor Julius Raab criticized as narrow-minded Wednesday the U.S. policy of restricting trade with Soviet bloc countries. He said Ihis was one of the reasons for what he called an i n c r e a s ing American unpopularity abroad. Raab told a news conference he felt Secretary of Stale Dulles was chiefly responsible for executing the policy, which recently pre vented Austria from delivering a steel mill to communist Czecho slovakia.
