PLUM GOOD SALAD MOLD
Do-ahead festive foods make for
easy entertaining.
. Plum Good Salad Mold is -an
ideal choice and one that will cer
tainly dress up a buffet table. This
two-layered, two-toned royal purple
and pale pink salad ring is as tasty
as it is beautifully regal in appear
ance. Tangy whole purple plums in gel-
Chocolate Drinks
Ncstle's has two chocolate drinks
on the market. There is the new,
improved Ncstle's EverRcady
Sweet Milk Cocoa that is instant
ly prepared as it dissolves in hot
milk or hot water.
Nestlc's Quik is a chocolate fla
vored drink which also mixes in
stantly. For the after-school snack,
a glass of cold chocolate milk,
made with Quik, and home made
cookies make a party for the small
fry.
Quik is out in a new family
size. The big package contains two
and two-thirds pounds and store
records show it is receiving en
thusiastic acceptance. In addition
te the family size, there are two
smaller sizes.
Serve chocolate drinks along with

either hot or cold chocolate drinks;

ings): VELVET CHEESE CAKE

, 1 package zwieback, crushed
Vi cup powdered sugar
. tablespoon . grated lemon
peel
2'i pounds cream cheese
134 cups granulated sugar
3 tablespoons flour
1'4 teaspoons grated orange peel
Vz teaspoon vanilla
S eggs, unbeaten
2 egg yolks
Vt cup heavy cream
Grease bottom and sides of 9
tnch spring-form pan with a little
of the butter or margarine. Com
bine remaining butter or marga
rine, zwieback crumbs, powdered
augar and '4 tablespoon grated lem
on peel. Mix well. Press on bot
tom and sides of spring-form pan,
reserving about 1-3 cup for top.
Combine cream cheese, granulated
sugar, flour, remaining lemon peel,
orange peel and vanilla: beat until
smooth and fluffy Add 1 egg at a
time, stirring in lightly. Add egg
yolks one at a time. Stir in heavy
cream. Spoon into spring-form pan,
spreading evenly. Sprinkle remain
ing crumb mixture on top. Bake
In very slow oven, 250 degrees, for
1 hour. Turn off heat and leave in
oven 1 hour lonRer. Remove from
oven. Let cnol slowly to room tem
perature. Chill. Yield: 12 to 1G
portions. This may be kept for
three or four days in the refrigerator.

PLUM COOD SALAD MOLD
1 (No. 2'4 can purple plums
'.i cup cold water
2 envelopes plain gelatin
1-3 cup lemon juice
V teaspoon salt
i pint cottage cheese
i cup finely chopped celery
1i cup commercial sour cream
Salad greens
Fresh mint
Drain syrup from plums and set
aside. Arrange plums in row in
bottom of lVa-quart ring mold. Add
water to syrup if necessary to
make Vi cups liquid and heat
Combine gelatin with water. Dis
solve gelatin in hot syrup. Blend
in lemon juice and salt. Pour about
1-3 into ring mold on top of plums
and chill until firm. Dice remain
ing plums. Cool remaining gelatin
slightly, and add cottage cheese,
plums, celery and sour cream.
Spoon blended mixture over the
firm plum layer; chill until firm.
Unmold on platter, fill center with
salad greens and garnish with mint
leaves. Serve with tart French
dressing or mayonnaise, if desired.

When frying hash, use a gen
erous amount of hot fat. Spread
the hash evenly over the whole
bottom of the skillet, cover and
cook over low heat without stir
ring until there is a crisp brown
crust on tho bottom. Add last
night's gravy when mixing the
hash so the mixture doesn't cook
too dry.

CASSEROLE
Ham and Potato Casserole Is one
of the easiest supper dishes to
make and eat! Put the ingredients
together in a matter of minutes,
then cover and bake leisurely until
potatoes are tender. There's no
work to using onion in this cas
serole. You simply spoon moisture
free instant minced onion from a
jar or foil packet into the other
ingredients. Best of all, you get
full, sweet onion flavor that doesn't
overpower the other ingredients.
HAM AND POTATO CASSEROLE
4 cups sliced raw potatoes
1 to 1V4 cups diced cooked
ham
1 cup milk
1 (10'i-ounce) can condensed
cream of mushroom soup
1 tablespoon instant minced
onion or, V cup finely,
chopped raw onion
1 teaspoon salt
Vt teaspoon pepper
Combine potatoes and ham In
buttered baking dish. Stir milk Into
mushroom soup, add onion, salt
and pepper, and mix well. Pour
over potatoes. Cover dish. Bake
in moderate oven (350 degrees)
about m hours, or until potatoes
are tender, removing cover after
1 hour to brown top.
Makes 4 to 5 servings.

3 tablespoons chopped parsley
Drain and pit cherries, reserving
syrup. Cook rice; drain. Brown
ham in oil. Combine ham with
rice. Place in greased casserole.
Set in 300 degree oven to keep
warm.
In a saucepan, combine cherry
syrup, lemon juice and cinnamon
stick; bring to boil. Mix cornstarch
with salt, spice and cold water.
Mix well. Stir gradually into boil
ing cherry syrup and cook un
til thick and clear, stirring con
stantly. Add pitted cherries to sy
rup. When ready to serve, remove
ham - rice casserole from oven,
making indentation in center of
casserole. Pour spiced cherry
sauce in center of casserole, from
corner to corner. Garnish with
chopped parsley. Serves 4 to (.
STUFFED FISH
A buttery dry bread dressing to
which chopped sweet pickles have
been added is perfect to use when
stuffing a fish that is to be baked.
