FOUR new Swift and Company baby food items have been tested and released to the
market. Three are Swift's new chicken varieties and the fourth, Egg Yolks and Bacon,
bring to 27 the separate items in Swift's line tor baby's diet.

egg yolks and bacon.
Strained chicken and sweet
potatoes, strained chicken with
rice and strained chicken a la
king are all available in the three
and one-half ounce size, contain-

Individual pot roast served on
broad noodles, accompanied by
broccoli, broiled mushrooms and
a dessert and salad are company
fare. Individual pot roasts work
out all right for a buffet supper,
too.
For six servings, have your
butcher cut 2 pounds of beef chuck
into 6 portions, Combine 2 table
spoons honey and 1 tablespoon
kitchen bouquet (or your own
choice of seasonings) in the bot
tom of a Dutch oven. Place over
moderate heat, add pot roasts and
turn to coat all sides widi the
honey mixture. Lightly brown meat
on all sides. Add teaspoon mar
joram, 1 teaspoon salt, V cup wa
ter, 1 medium sliced onion and 1
stalk of celery, sliced.
Cover and simmer over low heat
until meat is tender, about 2
hours. Replenish water when nec
essary. Remove meat to warm platter.
Put pan liquid, including vegeta
bles, through sieve or food mill
and blend to smoothness (use your
electric blender if you have one I.
Skim off fat. Measure 3 tablespoons
fat into saucepan. Blend in 3
tablespoons flour and k teaspoon
salt. Add enough water to pan liq
uid to make 2 cups. Stir into
fat-flour mixture and cook, stir
ring constantly over moderate heal
until gravy thickens and boils.
Serve roasts on bed of broad but
tered noodles with gravy in side
dish.

are a definitely different type of
food than vegetable-meats.

tional benefits and palatability.

Stuffed Round Steak
Quiz your neighbor about what
type of beef steak she serves most
often and she'll reply, "Round
steak, of course!"
Round steak heads the list be
cause it's abundant, economical,
and can be prepared in many
ways.
This lean meat contains the
round leg bone: it is a less-tender
steak, but braising tenderizes it.
Hound steak is browned in a little
hot fat. covered, and cooked with
a small amount of liquid. Cook
ing very gently over low heat or
in a moderately low oven '350
degrees) with a liquid insures a
tender, juicy steak.
Round steak can be prepared
with great individuality. While
some folks like to cut the meat
in serving size pieces, others like
to cut strips, roll larger pieces,
or even stuff the steak. Using un
usual seasonings, such as thyme
or ginger, in the flour which is
pounded into the meat adds vari
ety in flavor, while cooking with
different braising liquids such as
mushroom soup or apple cider
also increases the individuality of
the meal dish.
Here is a special round steak
recipe to try and then add to your
I iie. It's unusual because it is cut
in half, sandwiched with a herb-
seasoned stuffing, braised in con
somme and colorfully bedecked
with sliced stuffed olives. What's
more, if your family is small

steak can be frozen and reheated
in consomme for another meal.
STUFFED ROUND STEAK
l'j pounds round steak, cut Vz
inch thick
Va cup flour
1 teaspoon salt
l4 teaspoon pepper
V teaspoon melted buter or

Sprinkle steak with mixture of
flour, salt and pepper; pound on
both sides with a heavy saucer
or meat pounder until the flour is
absorbed. Cut steak in half. Mix
buter with stuffing and spread
stuffing on one half of steak; cov
er with remaining steak and skew
er edges. Brown in hot fat. Dilute
consomme with water and pour
over steak. Add olives. Cover and
simmer 114 hours. Serve with
cooking liquid. 4 to 6 servings.
