Only one woman who presides over it must be an all-around expert. The egg. for example, is not only the subject of entire cookbook chapters, but entire cookbooks. The latest of these is a volume de scribing some 300 ways to fix an omelet. The book was written by Nar clisa Chamberlain, an American who has lived for many years in France. One of the few women 'in this country who is not in the least surprised that a cookbook has been devoted to omelet making is Ma dame Romaine De Lyon, who is French and W'ho operates a nine table restaurant here. She traced the omelet back to the days of the Roman Empire and included the recipe of 'the first recorded omelet." This, she reports, was 'honey omelet of Apicius the Roman."
