The recipe comet from the Cali fornia Fig Inttitute. California Dried Figs t unsweetened etewed Califor nia dried lies 1 Dackane Spice Coke Mix i cup plus 2 tablespoons Juice i.om stewea ngs 3 whole eggs 3 tablespoons water I can moist coconut With scissors snip the stems oft the stewed ligs. Then place the lies in the mixing bowl and beat hard with the electric or nana beater. The figs will be whirled Into small bits. Add the contents from the Spice Cake Mix, plus the juice from the stewed figs. Beat for two minutes. Add the eggs and beat one minute. Then add the two tablespoons water and beat at low speed for one more minute. Place in two well-buttered 8-Inch layer pans. Bake In a mod erate oven (350 degrees) for about 26 minutes. Cool slightly. Frost i with your favorite vanilla frost ing with lots of coconut sprinkled on frosting between layers and on top. BKST WAT TO PREPARE , .. DRIED FIGS In a saucepan, cover the figs with cold water,, cover the pan tightly and cook slowly on - low heat for 35 minutes. No sugar un til you taste them after cooking, please. And do try these sun-sweetened ilga served cold with cold, fresh dairy soured cream or yoghurt, with a good sprinkling of pow dered sugar on top. Delicious for a dessert or any time. Btewed figs cut up in a fine cus tard, either boiled or baked, are auperb. Btewed flga cut into plecea and atirred together with a little s'aatned honey and nuts make an unusual sandwich filling and also a fine filling for a dessert omelet. (Keep your omelet delicate and thin and fold it over this exotic mixture). Stewed figs with their stems snipped off are quickly mashed filling for work-a-day sandwiches. They blend well with all the nut family, including peanut butter. with Jam or Jelly, most cheeses, and with some herbs such as sweet basil and tarragon. Use stewed figs lavishly in fruit salads, irult cups, and cut into bits to mix with fruit cocktails.
