It is simply made from red plums and Strawberry Jell-O. Plum Favorite The truly, truly fair Is olten the truly simple. Such is this dandy dessert. The Red Queen. Made from good red plums and a package o strawberry-flavored gelatin, The Red Queen looks stunning cut into shimmering squares and served on dessert plates of pure white milk glass or on your crystal. If it's a picnic' serve it on the new plastic-coated gaily decorated paper plates. The plum has a long history, longer perhaps than any other fruit except the apple. It's a "drupe," that Is, a true stone fruit. The Japanese are especially fond of this delicate fruit and there are many famous plum gardens in Ja pan. One of the prettiest of all , the fruit blossoms, the feathery plum has inspired many of the lov liest Japanese paintings and dec orative motifs. There are more than 3.000 va rieties of plums, so you can't be expected to keep up with them, recipe-wise. But to start off your collection of plum-good recipes, here is The Red Queen. 8 red plums, thinly aliced (about 4 cups j : ... , !i cup sugar 1 package strawberry.flavored gelatin Dash of salt 1 cup hot water 34 cup cold water , 2 tablespoons lemon juice Sweetened whipped cream ' Combine plums and sugar: let atand 10 minutes. Dissolve gelatin and salt in hot water. Add cold j water and lemon Juice. Pour over plums and chill. When gelatin is MOLDED DESSERTS Molded desserts are very pret ty to serve. Any molded tapioca cream, served with a favorite fruit or fresh berries, is mighty fine eatinc. Make the cream bv direc tions on quick-cooking tapioca pack age, pour into individual molds, chill until firm and unmold. Add fruit topping and plain or whipped cream also, if you like. slightly thickened, stir well and pour into square cake tin. Chill until firm. To serve cut into squares and garnish with whipped cream. Makes 8 servings. PLATTER MEAL Serve hot cooked broccoli (cas ilv prepared from a box of quick- frozen broccoli spears t on slices of sauteed ham. Top with a cheese sauce and sprinkle with buttered crumbs. For an extra hearty meal, add fried or scrambled eggs to the platter. . SPECIAL FOR AUGUST REAL, PEACH ARDBN FARMS CO. PLUM SNOW" 1 package fruit-flavored gela tin (any red flavor) 1 cup hot water 1 cup canned pium juice 2 egg whites, unbeaten 1 cup chopped drained canned plums Dissolve gelatin in hot water. Add plum juice. Chill unlil slight ly thickened. Then place Hi bowl of ice and water, add egg whites. and whip with egg beaten until Huffy and thick. Fold in plums. Spoon into individual molds or pile lightly in sherbet glasses. Chill until firm. Serve with whipped cream or custard sauce, if de sired. Makes 10 servings. Note: If desired. 1 cup chopped sweetened stewed fresh plums may be substituted for the canned plums. COCOA ALMOND ANOEl FOOD 1 package angel lood mix , 1 cup plus 3 tablespoons water 2 tablespoons sugar 1-3 cup cocoa teaspoon almond extract '2 cup water 1. Start oven for moderate heat (375 degrees F.. Into large bowl, measure first amount of water. Add bait of Egg White Mixture: s'iv umil moistened. Beat rapidly with sturdy egg beater or at high est speed of electric mixer until esg whites form very stiff peaks when beater is raised. Sprinkle in the sugar and beat about, 10 sec onds. 2. Add cocoa to Flour Mixture and sift into small bowl. Add al mond extract and remaining 4 cur water. Beat until just blended about i.j minute. Then fold Into the stiffly beaten egg whites until thoroughly blended, using about 30 (olu-over strokes. 1 To fold, use a large spoon, cut down through mixture, lift up. and fold over gently. Do not stir or beat. Scrape bottom of bowl with rubber scraper while blending lo keep cocoa mixture from Milling at bottom.) Baking. Pour batter into un greased 10-inch tube pan. Cut gent ly through batter once to re move large air bubbles. Bake in moderate oven (315 degrees F. 35 to 40 minutes. Cake is done if top spilngs back when pressed liahtly.
