"It's hard to beat peaches sim
ply sliced, with sugar, but you'll
want peach pie and cobbler and
lots of other "made ' desserts, too.
And you'll want to put some
peaches away for winter days
frozen, canned and preserved."
FREEZING PEACHES
Make fairly heavy sugar syrup
in advance by dissolving 3 cups
of granulated sugar in 4 cups hot
or cold water. Chill thoroughly in
refrigerator. Shortly before using,
add !a teaspoon pure ascorbic acid
(vitamin C) crystals or powder to
each four cups of ice cold syrup
and stir gently until dissolved. This
helps the peaches to keep their
fresh color and flavor while In the
freezer.
For freezing, use only fully ripe
peaches. Just right :or eating. To
keep them firm and pretty, do not
scald the fruit as you do in can
ning. Simply wash, halve and pit,
then peel off skins with a knife.
Working quickly, slice peaches di
rectly into cold syrup in freezing
Jars or cartons, press down, then
add cold syrup to cover. Leave one
inch head space lor expansion.
Put crumpled cellophane or foil
on top to keep peaches submerged
in the syrup. Wipe edges, cover
and freeze quickly.
CANNING PEACHES
If peaches are very juicy, can
them in their own rich syrup,
made by adding drv sugar to the
prepared peaches. Here's bow you
do it:
Measure five quarts peeled and
pitted fruit into kettle, and add 1
to 3 cups granulated sugar. Heat
slowly, stirring gently, until' sugar
dissolves; then continue cooking,
stirring occasionally, until fruit is
boiling hot throughout. Pack hot in
hot sterilized jars; cover with sy
rup, leaving i inch headspace. Ad
just lids. Process in boiling water
ba'h 20 minutes. Follow manufac
turer's direction for adjusting jar
lids.
PICKLED PEACHES
Boll together 10 minutes: 5 cups
granulated or brown sugar, 2 cups
vinegar, li cup water, 1 tablespoon
whole cloves, 3 three-inch pieces
of stick cinnamon. Scald and peel
12 to 15 small, firm-ripe peaches.
Cook few at a time in the spiced
syrup until just tender, turning
peaches frequently. With spoon, lift

out carefully and put into hot wide
mouthed Jars. Continue until all
the peaches are In the Jars, Then
boll down syrup 8 to 10 minutes,
until fairly thick. Strain over
peaches in jars. Seal.

2-3 cup tomato catsup
's cup real mayonnaise
1 tablespoon mustard-with-"
horseradish. . -
Mix ingredients thoroughly.
Spread on split frankfurters and
broil. Spoon excess sauce over the
meat while It Is cooking. Serve on
split, heated hot-dog buns.
FLUFFY MILK SHAKE .
Try this for an extra-light, extra
fluffy milk shake. Combine 2 table
spoons of chocolate instant pudding
with 1 cup cold milk and V cup
vanilla ice cream and beat with
egg beater or mixer.

Whenever you prepare to spray
plants It is a good time to recall
some safety advice. All contain
ers, such as.pai)s, basins or spray
guns, used for mixing or spray
ing inecticides, should be thor
oughly washed in hot soapsuds af
tei wards. After the residue has
been washed away, you can reuse
the container safely because there
won't be any vestige of leftover
chemical to react with a new pre
paration. ' .
