COCONUT EGGNOG PIE Ingredients: a tablespoons soft butter or margarine. !!. cut 4 ounce package) shredded coconut. 1 package vanilla pudd'ng and pie filling mix, 2 cups milk. Easy Made Mousse Pie . 1 There's guaranteed "guest ap peal" in a toasted coconut mousse pie. TOASTKD COCOXIT MOL'SSK P1K l'i cups fine wafer cookie crumbs 2 tablespoons sugar 1-J cup melted butler or margarine 2 cups heavy cream 1-S cup confectioners' sugar 1 teaspoon vanilla extract ; 1 cup shredded coconut, ' toasted. , 3 egg whites, stiffly beaten Mix chocolate wafer cookie crumbs and 2 tablespoons sugar. Add butler: blend thoroughly. Press mixture evenly and firmly on bottom and sides of 9-inch pie plate. Whip cream stiff: fold in confectioners' susar. Add vanil la extract and coconut: fold in. Lastly, fold in egg whites. Pour mixture into chocolate cookie pie shell: sprinkle cookie crumbs in scalloped design about 1 inch fro:n edge of crust. Freete firm. If you want to prepare the pie ahead of time and have it ready freeze pie until filling is firm, then . wrap in niolslure-vaporproof ma terial, label and place In food frecicr. To serve. Just unwrap and serve Immediately.
