Day. Children, love special days, from - Christmas to Thanksgiving and back, and father makes sure that they hear about Mother's Day, Presents for mother are In order ef course. And a gift her child has made through his own efforts Is bound to make a big hit. Like cake. Children love to putter In the kitch en, and If they nave the responsi bility ' of baking a cake for the special occasion of Mother's Day, their feeling of pleasure In accom plishment Is great. The fact that mother may have to help out by getting the ingred ients together on a tray for the young baker and by supervising the use of an electric mixer (if there Is one), doesn't spoil the fun. If the child reads the directions. does the messurlng of the various Ingredients and greases the pan, well the child has baked the cake, and no pretense about It. Stir In: . . ' . . J teaspoons double-acting baking powder Add: a eggs 1-J cup water 1 tablespoon grated orange rina Blend by hand or mixer (medium speed) for two minutes. Pour Into. two deep t Inch layer pans UVj In. deep) which have been rubbed with shortening and lined with heavy waxed paper. (IT smaller pens are used fill half full and bake re maining batter In cup cake pans). Bake In moderate oven (S75 F.) about SO minutes. When cool Ice with Orange Coconut Icing. CREAMY ORANGE ICING 1 1-3 cups sifted confectioners sugar - U teaspoon salt 1 egg . 1 table-pooita orange lulre cup granulated sugar cup shortening 1 tablespoon grated orange rind Mix confectioners sugar, salt and egg. Boll the orange Juloe and gran ulated sugar together for on min ute, then blend with the sugar and egg mixture. Add shortening and grated orange rind. Beat until creamy.
