POUROVER
' POUROVER FISH LOAF
A pourover fish loaf is an ex
cellent, yet unusual, way to stretch
the budget with a tasty Lenten dish.
One can (2 cups) of salmon (or
the equivalent of tuna) will easily
serve six people. If you're trylnit
to think of a different Lenten dish
that will appeal to the whole fam
ily, this is it) It can be made in
a casserole or individual baking
dishes. No ordinary fish loaf, this
recipe has a gestful flavor that's
contributed by the fresh lemon
juice. By adding the juice after the
loaf is cooled, you preserve the na
tural fresh lemon flavor plus all
the important vitamins and miner
als. Although the Idea of this loaf Is
novel, there s no trick to mating
it. The general mixing method is
the same as that of an ordinary
fish loaf. However, after it is baked,
fresh lemon juice is poured over to
give it that superior flavor. Try it
at your house and see 11 your fam
ily doesn't clamor for morel
SALMON LOAF
i cup bread crumbs
"" 1 egg. slightly beaten
cup milk
2 cups flaked salmon
3 tablespoons fresh lemon juice
2 teaspoon salt
li teaspoon pepper
2 tablespoons finely chopped on
ion. 2 tablespoons melted butter
Combine ingredients in order giv
en. Pack firmly into buttered loaf
pan or Individual baking dishes.
Bake in moderate oven 350 F.
bout 40 minutes.
Remove from oven and pour over
the following Lemon-Butter Sauce.
Serve hot.

1" V cup butter or margarine,
melted
'" 2 tablespoons minced parsley
V cup fresh lemon juice
teaspoon salt
