Gonoral Domand and Price Situation "Demand and Price Situation" (Issued by USDA Bureau of Agricultural Economics) for Jan uary Indicates that demand for farm1 products is likely to be maintained at current high levels during most of 1940, High level of non-ugrlcultural employment Is anticipated, and unless cur rent labor troubles arc prolonged they probably will not depress demand. Even if foreign crops urc large, total agricultural ex port!) will stay high. With special reference to spuds, a verbatim quote is In order. The report states: "The prices that growers will receive for 1845 crop potatoes during the balance of this marketing season are ex pected to average above the sup port levels maintained by the Department of Agriculture, Dur ing December and early January, wholesale potato prices strength ened substantially, both at coun try points and in terminal mar kets, primarily as a result of an unusual export demand and an inadequate supply of refriger ator cars at major shipping points. Prices for potatoes dur ing the week ended January 0 were close to, and In some in stances above, prices in the cor responding week a year earlier. "Carlot movement of potatoes since last September has been considerably smaller than would be expected in relation to the size of the very large 1945 crop, and shipments in December 1945 were actually less than in the same month a year earlier. Too large a proportion of the 1945 crop still remains at country points to permit much additional rise in price. Prices would break If too many old potatoes are shipped late in the season after new potatoes became avail able in considerable volume." We question only the price statement. Prices will average r,bove support levels only if USDA comes through 100 per cent in removing what the mar kets won't take; otherwise there )e a resasonable doubt. START THE DAY RIGHT! , Baked Winter Pears Broiled Lamb Chops and Hashed Brown Potatoes Toasted English Muffin Coffee or Milk HASHED BROWN POTATOES Melt 3 tablespoons shortening in a heavy frying pan; add 9 cups chopped or finely cut cooked potatoes, heaping them toward the center and away from the edges of the pan; season to taste. Cover with a lid or heavy plate; press down so that cover is right on top of the potatoes. Place a box of salt or rock on top to give pressure. Cook slowly and with out turning for. 15 to 20 minutes, or until crusty brown. Turn out onto a warm plate.
