WAR KITCHEN UBE MEAT-STRETCHING HAMBURGERS ON PICNICS By OAYNOR MADDOX Now with coffee flowing free ly again, thoughts of backyard grills and hamburgers with skill ful meat stretching are In order. Meat-Stretehing Hamburgers (Makea Large or 12 Small Cakes) Two cupa soft enriched bread crumbs, I cup milk, 2 table spoons minced onion, 8 table spoons fat, 1 pound chopped beef, i teaspoon nutmeg, 11 tea spoons salt, I teaspoon paprika. 1 egg, slightly beaten, 2 table spoons flour, i cup rich milk or thin cream. Soak crumbs In milk 10 min utes. Sauta onion in 1 table spoon fat until light brown. Add to meat with seasoning and slightly beaten egg. Add soaked bread crumbs and mix well with fork. Flour hands and ahape meat mixture Into 8 large or 12 small cakes. Cook on both sides over grill or under broiler, or saute in frying pan about 8 min utes until well browned. Baste with fat. Here's another backyard grill treat that goet well with either iced or hot coffee. Make the coffee in clean pot, and use at least 1 tablespoon for the cup. Cut crusts from bread. Spread lightly with little mustard. Make into sandwiches, filling with thin slices of American, cheese. Press together and fry in fat on both sides. Serve a dish of raw carrot sticks, radishes and scallions ready to eat with the grilled specialties. Also large bowl of potato salad everybody's favorite. Here's a aimple and delicious recipe. Potato Salad (Serves 4) Six medium potatoes, i cup French dressing, I tablespoon minced parsley, 1 teaspoon scraped onion, 1 tablespoon fine ly chopped dill pickle, mayon naise or salad dressing. Boil potatoes In Jackets until tender but still firm. Drain at once. Peel, dice, and mix with well-seasoned French dressing. Let stand until cold. Add the parsley, onion and dill pickle and enough mayonnaise or salad dressing to moisten well. Serve In a large bowl lined with crisp lettuce or other salad greens. MENU BREAKFAST: Orange juice, cracked wheat cereal, raisin toast, butter or fortified marg arine, coffee, milk. TIU Dessert diary summer 1943 When hot-weather appetite make light dinners appropriate, reinforce the menu with a hearty dessert one that will tempt the family into getting; its full share of nourishing food. Good desserts can cany plenty of food val ues, you know, including vitamins, minerals, and energy-producing essen tials. Our Diary of Desserts offer grand finales to lightweight menus. OLD-FASHIONED PIACH COBBIIR Prepare biscuit dough ss usuaL Roll . it out to a thickness of M inch. Cut strip to fit around the sides of a pan about 2 inches deep. Arrange fresh, sliced peaches, sugared to taste, in pan. . Dot with butter. Add 14 cup water to create a steam. Cover peaches with remaining dough; press edges together to seal; cut large slits in top to allow steam to escape. Bake in hot oven (450 F.) for 15 minutes, then turn down heat and bake in moderate oven (350 F.) for 15 minutes longer. FRUITED FLOATING ISLAND Place fresh berries or sliced fruits in tali'1, sherbet dishes, cover with icy cold, soft, boiled custard, and top with me ringue made by besting egg whites until stiff, then adding powdered sugar and blending. Put a fleck of jelly or , jam on top of the meringue and chilL FRUIT BITTY Combine 1H cup moist breadcrumbs with H cup sugar and 1J4 taps, cinnamon. Place alter nate layers of fresh fruit and bread- ' . crumbs in casserole, beginning with -fruit and ending with breadcrumbs. Dot with butter or other shortening, add H cup of fruit juice or water, cover . casserole and bake in moderate oven (375 F.) for 45 minutes. Serve with light cream or thin custard sauce. FRUIT DUMPLINGS Make biscuit dough using just enough milk or water . to make it very stiff. Stir in 1 cup chopped fruit or whole berries. Drop dough from tablespoon into gently boiling water, cover and cook 12 min utes without peeking. Drain and serve with cream or fruit sauce. GRAPE CREAM Beat together 3 egg yolks and H cup of sugar. Add 1 cup milk and cook over hot water in top of double boiler for 5 minutes stirring constantly. Remove from heat. Soften 1 tbsp. gelatin in cold water and add to cooked mixture. Cool slightly. Add 1 cup seeded table grapes and fold in 3 stiffly beaten egg whites. Pour into mold and chill until firm. Berries or other fresh fruit may be used in place of grapes.
